From Mel Coker's Facebook Post, "I saw a RU-vid video for a crispy chicken sandwich yesterday. It looked awesome. So, tonight, I prepared this for our meal. It was awesome - absolutely one of the best sandwiches ever to hit my mouth. I followed the great RU-vid presentation by Master Chef Robert Del Grande. I used a chopped salad kit for the cabbage and lettuce (peanut oil for the fried chicken). I toasted the buns too and added Chipotle Crema salsa."

Where are you from? I am from Georgia. Alot of your cooking techniques I learned from my grandparents. I am not a chef but I enjoy cooking. It is refreshing to see a master chef like you cooking things like you do. I bet you still can't make biscuits to rival my grandmothers. LOL!!! She showed me and my 2 sisters how but there is nothing that I have ever had since that compares. Especially with her gravy. My grandfather had to have biscuits at every dinner. No meal was complete without them in his opinion. Keep up the good work! Awesome videos!

@curlylarrymoe Thank you for sharing. Robert Del Grande, one of the celebrated chefs of America, is the executive chef and partner of the renowned Cafe Annie in Houston, TX. Robert was born in 1954. He received his B. S. in Chemistry and Biology from the University of San Francisco and his Ph.D. in Biochemistry from the University of California at Riverside in 1980. In 1981, while courting Mimi Kinsman (now Mimi Del Grande), Robert ventured to Houston where Mimi was visiting her sister and brother-in-law Candice and Lonnie Schiller. There, Robert began experimenting in the kitchen of the Schiller’s restaurant, Cafe Annie. Robert remained in Houston and soon became the Executive Chef of Cafe Annie. He has since figured prominently in the historical revision of American cooking, indelibly changing the culinary landscape with his use of the tastes and flavors of the Southwest. Robert and Mimi Del Grande and Candice and Lonnie Schiller are also the founders and partners in several other ventures: • Cafe Express is a sporty yet sophisticated cafe offering "Good Food Fast" as an antidote to the fast food culture. Cafe Express now has six locations in Houston, three in Dallas and plans for more throughout the country. Nation's Restaurant News recently named Cafe Express one of the 12 "Hottest Concepts" in the United States. • Taco Milagro is the newest concept and offers Robert's vision of Mexican cuisine in Texas. Fyi just wana add my chicken patties is grind same version of beef patties, also the habdmade fries is it need to dry firstbefore frying in deepfry machine thank you for any helpful suggestion about patties and fries:)

Thank you Chef . Fantastic Informative video and a Grommet Sandwich. combination , of a crispy chicken breast , crunch from cabbage Slaw , followed by taste of sweetness of watermelon . saltiness from added Salt and freshness of Fresh sour Lime juice , It is a Taste Bomb , it is a dynamite of taste and flavor . It looks simple But If we look at it with Culinary eyes , It is a Master piece , It is my opinion

Even in seasoning this chicken and dipping it in the buttermilk can you replace the buttermilk with just plain milk if you don't use buttermilk or will you taste the buttermilk after you fry the chicken?

this is one of my favorite recipes, though I prefer trying to get the chicken as thin as possible, just so it fits on the burger properly, too thick just makes it problematic for me. Plus I panko the chicken (so buttermilk overnight, flour, then egg, then panko then into the fryer) love the way panko turns out.

Epic looking sandwich!!! Who doesnt love fried chicken and watermelon? Id think the sweetness of the watermelon would offset the salty/spiciness of the chicken. Everything looks delicious! Where in Texas are you located?

I don't know why this is just now showing up in my recommended, but I'm really wishing this was in NC... $10!? I can't eat at mcdonalds for that price (sure the cheap menu exist, but the cheap menu doesn't fill a fat guy up)!

@@OPTFOOD :) For the record, and others' benefit, buttermilk would function in much the same manner a yogurt would -- lactic acid breaking down protein in the meat, making it more tender and succulent. Buttermilk is leaner though -- which is why yogurt should generally produce better results.
