Fresh yuca is amazing immediately after cooking, leftover yuca is never the same reheating though so we always fry it and it is wonderful.

I'm Cuban so we eat it with mojo (olive oil and garlic) just dip and eat. These are sooo much crunchier than French fries.

Thanks for this! I grow Cassava, but didn't really know how to use it in recipes. Fried looks delicious! Actually it makes a nice ornamental plant in the landscape. The slightest breeze causes the leaves to flutter. Also, visitors to my place frequently ask "What is that plant ?" Good conversation starter.

Careful it’s poisonous before cooking. The leaves, sap and stalk are very poisonous if I’m not mistaken.

Boiled yucca (you-ka) with bacon, pork, chorizos, sausages, onions & lots of garlic is awesome! Always make extra to make fried next day!!

You are right about pronunciation. Yuca (with one "c") is pronounced "you-ka" and it is what they cooked here. Yucca (with 2 "c") is pronounced "yuh-ka" and it is an ornamental plant that is not related to the edible one. Yuca is known as Manihot esculenta (that's its scientific name) and yucca is actually a group of several species know by the scientific names Yucca gigantea, Y. filifera and others.

My favorite thing ❤❤❤ I use a garlic mojito (oil garlic vinegar salt) is so good. Sauté Garlic and onion together with oil makes a great pairing condiment

As a latin american woman I have to say that no salt is added to the yuca until it is soft. When it boils enough and softens, add the salt. If you add it before it does not soften enough later.

The lady doesn't know how to peel yuca. And you don't need to halve or devein before cooking. Just cut the yuca into large chunks, peel the easy and safe way, and boil the chunks with salt to taste. The chunks will separate into halves on their own when cooked. When it's cool enough to touch, devein if necessary (oftentimes the vein or core falls away during cooking). Also, there's no need for deep frying. I fry yuca with a little oil, and lots of white onion cut into thick slices, until the yuca is crispy and golden. The onion gives it a delicious flavor, and you can serve the yuca with the onions if you like.

Yuca contains naturally occurring cyanide that can cause paralysis and death. This should be addressed, as well as all the steps required to prepare it safely. This gross negligence is so disturbing.

I am Caribbean and eat yucca often and in large quantities. We boil it, fry it and put in in stews. Never had a problem!

Probably also because the ones sold here in the US are the sweeter kind. Cooking must remove the CN. Eating raw yuca is not a pleasant endeavor so I am sure most people won't try it...hopefully.

There are two types or varieties. the sweet one does not require any steps or preparation. The bitter one is not sold in supermarkets and it's usually used just for cassava cake.

There are two types or varieties. The sweet one, you dont have to necessarily boil it before consuming it. The bitter one its only used for the cassava cake and it's very hard to find.

I wait until i have done the initial boil then pull the woody strands pull out easily. Keeps a little more of the yucca.

Yucca Cuban style: boil them just like she did, in a separate pot get vegetable or corn oil hot then pour it over a container with sliced onion, garlic, salt and vinegar (and or lime). That is the absolute greatest and most classic condiment for boiled or even fried yucca.

peeling it is way easier than she shows and it is easier to take the center after it is boiled, marinate the cooked cassava in crushed garlic, lemon or lime juice and salt for 5 mins before frying.

Peeling is easier if you cut a line vertically down just the hard peel,not the yuca, then the same way but horizontally every few inches. Just by scoring the peel you can put your pairing knife (or your thumb) between the hard peel and the yuca and separate them easily. Then just boil them in quarters and take the woody center off after boiling.

I’ve made fried Yuca with FROZEN Yuca many times and it turns out WONDERFULLY!! Very economical from the local Asian/Hispanic Farmer’s Market. Saves the peeling frustration…all you do is boil from frozen for about 25-30 minutes in salted water (I like to add sliced garlic, or garlic cloves, too), then drain/dry as shown. The center vein is MUCH easier to remove at this point, as OP stated! I DOUBLE FRY (first at 350 deg F for 4 min or so, then at 375 for a couple minutes) in peanut oil, to make them EXTRA CRISPY. TRY IT!!!

First had yucca at a Peruvian chicken shop. Rice and beans and yucca and roast chicken with lots of different sauces. So good. Take me back.

It is all over South America. just because you named a place after it, it doesn’t mean the rest of the world doesn’t have or that it is called yuca there. Just an example, it was and it is the main staple of the Brazilian indigenous people going back thousands of years!

How do I asked for Yucca to be cooked throughly? My local peruvian Restaurant that serves this sometimes gives us yucca that's dry, tough and hand hard in the middle. It's also white. Then on other occasions its beautifully soft and golden in color in the middle making it super yummy. Idk what to do help!

So I hate to rain on everyone's parade and maybe it's because of where I live but where does one even buy yuca it's certainly not in any of my grocery stores which tells you where I live that there is a food shortage or a fresh food shortage I love cooking with ATK but I'm kind of angry that ATK always assumes that I am someone that makes more than the average income in the US and lives in a great place I don't but I want to cook well so help me be a part of your program but not feel excluded

Hispanic Food?? Don’t you know like 60 percent of most Hispanic dishes derived from Africa, especially Yucca. Every culture has a different name for the same dishes.. people of color anyway I can’t speak for European descendants.
