*Making a Thicker, Sweeter Version*
If you prefer your Cuban Coffee closer in consistency to the kind served in paper cups in Miami, you'll have to increase the sugar content to around 1 - 1.5 TABLESPOONS per serving. ** What kind of coffee should I use? **
Cuban coffees are most traditional, but any medium-to-dark roast will do. Cuban coffee is sold at almost all grocery stores. Brands include Cafe Bustelo and Cafe Pilon, among others. These coffees are a bit finer in grind than I typically recommend for moka pots, which makes the next tip ESPECIALLY important:
** My Abuela tamps the coffee down. Why shouldn't I? **
This is a common mistake with modern moka pots. The instructions with most of today's moka pots specifically state not to tamp, and for good reason. Tamping makes it harder for the steam to rise through the grounds. This creates a build-up of pressure that modern, aluminum moka pots are not constructed to handle, putting you at risk of a blow-out. Using finely ground coffee (common with Cuban coffee brands) increases this risk since the smaller grinds mean more compaction, less air, and more pressure build-up. So it's especially important not to tamp.
** You're using decaf. What's wrong with you... **
Health issues dictate that I'm stuck drinking decaf for the foreseeable future. But you don't have too! Lucky you!
** You don't use enough sugar, or the wrong sugar. **
It's true, traditional Cuban Coffee can have as much as a full TABLESPOON of sugar per cup. Feel free to add more sugar if you like. For me, 1-2 teaspoons per serving provides a great balance that is still very sweet, but allows the coffee flavor to shine through. But in general, more sugar = thicker espuma. For the sugar type, I've used standard white sugar, but brown sugar or turbinado can be used as well.
** Don't add extra water to the coffee. **
I agree. But as I say in the video, this option is only for folks who can't stomach the full-strength stuff. It's not traditional.
** My Abuela says you're doing it wrong. **
Like any "traditional" recipe, there's many variations out there, and the makers of each one will always claim theirs as the most "authentic". And they may be right!
** Safety Advisory: **
Moka pots have been used in households worldwide for decades. But it is a pressure-based system, so it's important to read your manual and follow all safety instructions recommended by the manufacturer. Never leave a moka pot unattended on the heat.

**REGARDING MELT-DOWNS OVER MY USE OF DECAF:** As mentioned in the video description, I'm stuck using decaf due to a heart condition. Decaf is obviously not traditional here. But if you can use standard coffee -- more power to you. I envy you!

I used to say that decaf was a cruel joke .... now that I am older, I cannot drink a pot of coffee a day because of my blood pressure. I have a cup of regular in the morning and after dinner, and drink decaf throughout the day.... because I genuinely enjoy a good cup of coffee.

Mokas make the best coffee ever! If you ever get a chance go to a Bialetti (the inventor was named Alfonso Bialetti) store in Italy and you’ll find super colorful mokas, bright red or green ones and the like.

i just got my moka pot (2 cups) and finished seasoning it for tomorrow morning's use. i tried making the fake crema and didnt get the same result. turns out i didnt use enough sugar. thanks for this tutorial and i hope tomorrow will be a success for may cuban coffee. :)

+Jasmine Parmar - If at a cafe, it'll typically be made with a standard commercial espresso machine. But if made at a Cuban home, moka pots are widely used. With the economic boom following WWI, Bialetti, the Italian coffee pot maker, began exporting their famous “stovetop espresso machines” to the island. The device became a staple in homes across Cuba, where it is used in the daily preparation of Cuban Coffee to this day.

hmm. Who would of thunk that cubano coffee was just spanish coffee with a sugar/coffee mix in it. Well, good to know. I know you did this with a moka pot but would it somewhat work with a kerig coffee machine. I know one adaption to the steps would be need to keep the cup in a microwave to keep it warm while making the espuma.

Phoenix Villegas Cuban coffee was originally made wih Cuban coffee beans from Cuba. But in 1959, after Fidel Castro took over and kicked all the coffee makers out (ie. Pilon, etc) many of them took these Cuban beans to Brazil and started producing the coffee there. Today, that's where the majority of Cuban style coffee is produced (Pilon, Bustelo, La Llave, etc). Also, whipping the sugar to a foam is a technique used for hundreds of years in Cuba before these - 15+ bar of pressure espresso machines that automatically brew coffee with crema - existed.

I make cuban coffee every single day. I usually just use an expresso machine which is easier. The results are the same, but this is coming from a cuban herself.

+Clint Cheng - For this particular video, a moka pot was used because it's one of the most common ways Cuban coffee is traditionally made. But lots of other folks like to use moka pot coffee, then cut it 50/50 with water, similar to an Americano (espresso with water). Both moka pot coffee and espresso provide a lot of added flavor and body that you simply don't get with drip coffee alone, even after it's watered down. Thanks for watching! :)

+Clint Cheng The trick using a moka pot is to start with boiling water (from a kettle) in the reservoir (Reduces time on the stove thus preventing the burning of the coffee, which essentially is the reason why the moka pot has such a bad reputation in the first place). And use a slightly more coarse ground of coffee (Reduces bitterness even more) And then if you still think its too strong... Make a Cappuccino out of it :)

We do something really similar in southern Italy. The only difference is that we take the first coffe that comes out of the moka and mix with sugar, then leave the moka on the stove to allow all the coffe to be extracted. When the coffe is ready, we pour the coffee from the moka into espresso cups and then add the cream we made earlier directly in the cups. Same result, different techinique.

To make it authentic, you want to tamp down the grounds. If you’ve ever watched a Cuban make some coffee you know you fill it, mash it, fill it some more, then really mash it again and crush in every possible ground you can get in there. That’s why it’s so strong and tasty.

If you have a moka pot and press the coffee down you risk hurting yourself and the coffee maker when all that explodes. Moka pots were not built to sustain pressure to that amount, so that is highly discouraged. An espresso machine on the other hand is able to handle that pressure hence why you see them press down.

I remember when I first had this was in Cuba when my fiance and I visited his family. Just a sip and I already felt the caffeine kicking me. When I returned home, I drank a mug full of this and I wasn't able to sleep for 3 days!

For a moka pot, you want to put boiling water in first, and you also want to run cold water over the bottom chamber as soon as the coffee is done brewing. Both these things minimize the time the beans spend heating up, or being hot, this very noticeably drops the bitterness of the final coffee

Also some good light roasted natural-processed Ethiopian coffee must be used. Rested exactly 10 days since roast date and ground at most 20 seconds before starting to brew. Please also note that regular sugar must be replaced with organic brown sugar, and all the volumetric measurements converted to reproducible SI mass-based ones.

I’ve had this at an office in ft Lauderdale made with contraband Cuban coffee and raw sugar. The guys told me “drink one, and you’re up for two days - drink two and you’re able to see thru walls”. The first claim was true - I only had one, but I have no doubt about the second claim.

I 'm from south Florida and worked in a sugar refinery with some Cubanos who drank lots of coffee. They often shared it with me. They said they used sugar and lots of dark rum to sweeten their coffee as well . Ymmm...

This is so similar to the filter coffee from Southern India. But instead of using an apparatus where the coffee decoction comes up, we use a thing that takes in hot water and slowly sends it through the coffee and out into a different chamber in the bottom

Traditional Italian espresso is made in an espresso machine. Moka coffee isn't espresso. Also, they have moka pots in Cuba.

There are a few minor improvements that can be made. Instead of pouring the coffee into the sugar/coffee mix, spoon a little of the sugar into each coffee cup and then pour the coffee. Each cup of café will make its own crema that way.
