In Denmark, we grew up having the Danish Kringle on special occasions. My family would go to the bakery and pick up a fresh tasty Kringle. Then, bring it back to have on the dining room table and serve with coffee or hot chocolate with it.
One of the wienerbrød we are making today is the Danish Kringle. This homemade Danish Kringle is a butter-layered Danish pastry shaped like a pretzel made from a yeast dough and filled with a marzipan mixture. However, the Danish Kringle can be made of different types of dough too.
Danish Pastry (Kringle) Recipe:
Dough Ingredients:
•3 1/2 cups flour
•12 oz butter
•2/3 cup milk
•1/2 cup heavy cream
•1/4 cup sugar
•2 eggs
•1 tblsp bread machine yeast
•1 tsp cardamom
•1/2 tsp salt
•1 tsp vanilla extract
Filling Ingredients:
•3/4 cup sugar
•8 tbsp butter
•8 oz. almond paste
Topping Ingredients:
•2 tblsp pearl sugar mixed
•2 tblsp chopped almonds

Would like to know what almond paste you use. I am in Canada, and I have only seen the hard kind, nothing like the soft, creamy one that you use. Thanks.

My mother used different almond pastes. She primarily used either Solo Almond paste or Odense almond paste. Sometimes she made it home made which we have a video as well. She liked experimenting trying different almond pastes when she baked. But it appears she used the Solo almond paste in this video. Cheers!

Looks amazing! I was going to say that it is much easier, I think, to roll the cold butter out between two sheets of parchment paper, then you won't need some much flour and it is quicker and comes out more uniform in shape for rolling out in the dough to make your layers. it is what I do when I make Croissants when you need the cold butter layer, but don't want too much flour affecting the layers. Looking forward to trying your recipe out! Thank you!

I made Danish today from frozen dough I had made a few months ago and it was delicious! As a kid in Brooklyn NY, we had incredible bakeries and I loved all things not overly sweet even with a sweet tooth. I am a Greek and love the genius of the Scandinavian desserts!!! Coffee cakes tarts danish. We had German Scandinavian, French bakeries at out finger tips. I loved real ingredients and could taste the difference especially in Eclairs and Napoleons (not Scandinavian I know) pure delight. I get so annoyed when I see Danish being made out of MARGARINE are you kidding. There is a "self proclaimed famous Scandinavian chef" who used margarine and lard. I can understand lard but margarine is not original as she claimed it is a product made because of the world wars and reduction of fats available to the public. Certainly questionable and unhealthy see how it is made and quite disgusting. I cannot understand using margarine and saying its original. Its poison as far as I am concerned and unhealthy!!!!! I hope you are in agreement!!!!

Fantastic. Can't wait to try this and experiment with fillings. I assume I could use a jellied filling? This also makes me want to finally bite the bullet and order a french pin, since puff pastry for beef wellington is made essentially the same way.

My mother used different almond pastes. She primarily used Odense almond paste but in this video she used a different brand which I do not know the name of the brand. Sometimes she made it home made which we have a video as well. She liked experimenting trying different almond pastes when she baked. Sorry I don't have the specific with this almond paste. Cheers!

Well ... I think you're a bit home sick! Hi Karen ...how are you? Still busy baking goodies. So, the butter you were working on in the flour, before folding it in to the dough is cold and rested in the refrigerator? is that the trick to flaky pastry? And home made almond paste right? I liked your most recent fish recipe, thank you! Have not visited for a while and just catching up! Till next recipe....:)

nita Chamberlain So nice to see your name show up. Thanks. Yes, cold butter and folding the dough several times. It takes some experince. Back home we usually bought it from the bakers. Yes, I do get homesick. Hope for a trip home next year. Glad to hear that you liked the fish. It is also one of my favorites. So traditonal. Enjoy the weekend.

@jeangiesel5709

Actually the amount for the filling is hard to figure out. She only uses 10oz butter for the dough which leaves half a stick or 2oz. From another similar recipe, I use 8oz butter, 8ozalmond paste and 3/4cup sugar. But it looks like she uses about half these amounts.

Jens Nielsen This is the very BEST procedure in the mfg. of true Dansk Kringle I have ever found. No machine could ever compare and I have attempted many different recipes. My question is if there is anyone out there who can help me or teach me how to make the perfect Dansk Almond Macaroon kringle. In my opinion this is the very finest of kringle on the face of the earth but I cannot find any recommendations on it's manufacture. Please help

Did you find it hard to transition to dry yeast after moving to the US? I was so used to fresh (wet) yeast that it took me a while to master dry yeast!

This looks wonderful & such a straight-forward technique. It looks like you use 10 oz of butter -- 2 1/2 sticks which the dough wraps around -- not 12 oz? Also, what technique is used to get the final, formed dough ring onto the prepared baking sheet?
@ScandinavianToday
@ScandinavianToday 9 лет назад
+Sara Holm You are right, I used only 10 oz on the video, but it should have been 12 oz. Sorry. I just lifted the dough to the baking sheet and shaped it again. Thanks for commenting.
