Vietnamese Pho Bo is the national dish and also the most popular Vietnamese dish as well. Nowadays, Pho Vietnam appears in many corners all over the world. Today, I'm going to introduce you how to make the best Vietnamese Pho Bo.
First, we wash the brisket bones/ knuckle bones with water for 2 or 3 times. Soak them with a little bit of salt and a bit of vinegar for about 20 minutes. Then wash then and cook on high heat for 15 minutes. The brisket bone has been cooked for 15 minutes, now take them out and wash one more time. Cook them with 4 litters of water. During simmer, the broth may evaporate, make sure we add more boil water into broth pot.
Lightly grilled gingers, onions. Then add the spice mix into frying pan as well. Mix well. Put the spice mix into the cloth bag, then placed the spice mix bag into the simmer pot. Skim off the top layer periodically to remove impurities. Now we simmer the brisket beef from 1,5 hour to 2 hours. When it's soft and tender, we take it out, wash it into cold water, then keep it in the fridge.

The broth after cooked for 10 to 12 hours. Take all the bones out. Cut meat balls into half then add into the broth. Cook them around 30 minutes, then take them out.
Now add sea salt, knor powder, brown sugar, rock sugar into a bowl
then add some broth, mix well, finally put them into the broth pot. We taste it and you can figure out if we need to add more sugar, salt or knor powder. Depend on your taste.
Slice the cooked brisket beef. Cut spring onions, onions and chilli. Soak onions into ice water to remove some of the pungency and soften the flavour around 5 to 10 minutes.
Turn the oven on medium heat to warm up the bowls. Or you also warm them up with boil water.
Putting the steak boneless into the freezer for 30 minutes to an hour
before cutting to partially freeze it. This helps firm up
the meat, making it easier to slice. Slice them into very thin pieces.
Put noodles into boil water for 2 minutes, then put them into the large bowl.
Then add onions, spring onions and chilli on the top. Finally add the broth into Pho Bo bowl.
Put the bean sprouts into boil water for 2 minutes, then place them on the plate with basil. Cut lemon into pieces.
When we ready to eat, add a little bit of basil, bean sprouts, lemon, hoisin sauce and chilli sauce, then enjoy it. Highly recommend enjoy it when it is hot.
_Ingredients
- 1.5 kg (brisket beef bone)
- 500g (brisket beef)
- 700g (steak boneless)
- 300g (meat balls)
- 1kg (soup rice noodle)
_ For broth soup
- 450g (onion)
- 50g (ginger)
(herb ingredients or spice mix)
- coriander seeds
- cloves
- anise stars
- cinnamon
-fennel seeds
cardamon
Herbs
- Onions
- Spring onions
- Lemons
-Basil
-Bean sprouts
- Chilli
- Hoisin sauce
- Chilli sauce
- Black pepper
Spices for broth soup
- 20g (brown sugar )
- 35g (salt)
- 50g (knor powder)
- 30g (rock sugar).
