That's how kebap meat is supposed to look like. Not the light brown, smooth surface baloney. Layers of dark brown beef with fat in between. Fine work place and food going on there.

In most countries outside of Turkiye it is processed leftover meat, meaning garbage. This is real döner. Btw, the tomatoes and peppers usually don't get put in the stack. It's his own lil touch, looks delicious, though. Here in the Netherlands, there are only a few places that sell real döner. Germany used to have a lot. But apparently, Germans are greedy and would rather pay a third less for a döner bread and eat garbage. The guy in Duesseldorf told me Germans are willing to pay 7 euros for 1, not 10. Hence why most sell garbage nowadays. I'd rather pay 10 and maybe eat less frequently if that's too expensive for people.

This is the typical Turkish sandwich version they like it with fries. In Türkiye you can decide how much meat you want per Gramm or portion, because it's steak meat it's expensive.
