This easy homemade pumpkin cheesecake is a perfect dessert for the holidays!.. or if you're just craving for pumpkin if you want something different from a pumpkin pie. I used a pre-made crust to make is a lot easier and faster.
Ingredients:
2 pkg cream cheese (for me I use the PHILADELPHIA brand)
1/2 cup sugar
1/2 cup canned pumpkin
1/2 tsp vanilla extract
1/2 tsp. ground cinnamon
dash of ground cloves
dash of nutmeg
2 eggs
graham cracker crumb crust (6oz)
(or you can make your own with graham cracker and butter)
1 cup thawed cool whip
How to make it:
1. preheat oven to 350 deg F
2. beat cream cheese, sugar, pumpkin, vanilla and spices in a large bowl with mixer until smooth.
3. Add eggs and beat until well blended
4. Bake for 40 minutes
5. cool and refrigerate for 3 hours
6. top with cool whip
7. sprinkle with cinnamon
