This simple to make recipe will guarantee you a cheap and tasty alternative to shop-bought alcohol. I’ve been making this for over 10 years and trust me….its good stuff!
Recipe:
45 Elderflower heads
15L Water
3kg Sugar
2/3 Lemons
3/4 Limes
4 tbsp White wine vinegar
1 Sachet yeast

Living in the philipines, having liqor ban, I did mango wine, around 6-8 kilo of mango, 2 kilo of sugar, regular dry yeast, cause, the only yeast available, add water up to 20 liters, let it work a couple ow weeks, pass to another jug, rest 2 weeks, then bottle, taste awesome, just trying Mango pure, looking and smelling good too.

I seee lots of wild mustard growing below the tree too! Spade shaped leaf, with toothed edges, and small white flowers with two paired petals with on stamen and 4 pistals. It can have a hot garlicky flavor.

Great recipe and well explained. Anyone making elderflower wine or champagne try to get the flowers from the taller tree type elder as the smaller hedge type elder has a funny smell and can give a bad taste. Give them a sniff and if they smell like cat piss go on to another tree 😊

Nice video! I have just tried this recepie. My third year in a row doing it but this year i have decided to follow yours and use yeast. When i removed the elderflower heads and everything else there were quite a few black floating specs at the surface, i removed quite a few of them. Im now wondering if that was a mistake, as ive not seen any major bubbles in the bubbler? Was it maybe yeast?

Thanks Dustin for the great, simple little video. Just one question, did you use caster sugar (I think I recognise those packets) or ordinary granulated sugar in your recipe and does it really matter what type of sugar you use? I'm assuming it's a matter of caster sugar being easier to dissolve? Thanks again.

What did you do to carbonate the champagne?

The fermentation process will carbonate it for you. The addition of a pinch of sugar added to the bottle prior to filling will ensure fizz!

What do you mean by 2/3 lemons, meaning two thirds, or did you want to say 2 to 3 (2-3)? Please tell us and show how you suck without getting germs on to the hose. Is it just by keeping your tongue away and lips agood bit oiff the opening, I suppose? What does the vinegar do? Why no black tea? What's the duifference with boiling the flowers and lemons? What depress Celsius is good for the 3 stages? Is the last brewing not cooler? Or at least the final storage? How long does it keep? And how long should one let it mature before using, please? Alcohol % I got just a tiny bit at 15 y o, maybe 1%. No risk of bottles exploding at 10 % alcohol? - Thank you, lovely.

You're going to get different flavor characteristics, and depending on your strain you might not have the same alcohol tolerances, which, if this comes out strong, will mean you'll develop off flavors as the beer yeast struggles in the alcohol rich environment.

Describe the vacuum-sucking without making bacteria please. Temperatures (in C?) What about risk of explosion, does one HAVE to buy expensive champagne bottles?¨ What do you think of using ordinary baking yeast? Is your chapmagne dry then? In order to get less alc, doesn one just decrease sugar? Thank you if you can ansewr, and be well!

Baking yeast is different than brewer's or wine or champagne yeast. I wouldn't use it in this recipe.

Good video for home-brewing. But there is really no sense in sterilising all the equipment except the bottles. Flowers naturally contain lot of bacteria and yeast and also if you leave anything sterilised on fresh air even for the second, microbes will start to grow. I recommend to put just a tiny bit of sulphur dioxide to the mixture of flowers, water and limes which will kill wild microbes but do not have effect on champagne yeast. But you need to be careful with amounts because if you overkill it, all the microbes will die.

@@bigbark4627 Yes because the juice and the peel (really you can just zest and juice them. I wouldn't throw the whole carcass in) add much needed citric acid which helps preserve the beverage as well as feed the yeast. You'll find citrus in pretty much all elderflower champagne recipes.

Pollen are microscopic multicellular capsules containing a plant's sperm cells; yeast is a unicellular fungal organism which is completely separate from plants. Yeast has nothing to do with pollen. They come from two completely different kingdoms of eukaryotes: plants and fungi.

I really doubt that it tastes good, there's nothing to give it tanin and body, there's nothing to give it sweetness, there's no nutrient for the yeast so it's possible that there are off flavors. 1 month very little time for it to mellow out and taste good, you haven't done a tasting or a description of the drink. I have some experience with homebrewing and I wouldn't recommend this.

I’ve made it loads of times, slightly different recipe and it tastes great. I’d recommend maturing in the bottle for a couple of months for a better flavour.

U will love to come to Newton popple ford it's near Exeter but it's a little village with loads of green land they have a public common they have a public river with loads of vegetables u can take they have lots of wild garlic and a river witch no one goes to because it's in a tiny village and it's got massive fish loads of sticks to make a hut/den it is perfect and the odd 1 or 2 go there

The thing you call a bubbler is called an airlock...... for those that don't know what it does or is what it does is when the fermentation is taking place it builds up a gas and expands and it releases the gas
