they're great with garlic and a handful of black peppercorns too, might add some lemon peel next time. I usually let mine go for about 4 weeks and they're so good I eat them straight out of the jar, so I ferment any of the non-woody off cuts too and try to save the nice spears for when presentation counts

Have you thought about making Curry/Kimchi Paste? Fermented peppers, garlic, ginger, turmeric, maybe fish sauce as part of the liquid/salt. Currently a recipe I'm working on but I'd love to see your take on it.
