How to make fish balls.

Fishballs.
Ingredients:
600 grams of skinless, boneless fish (I used hake, can also be curvina).
12 surimi sticks.
1 whole spring onion including the green part (replace with 1 onion and a chive stalk).
2 tablespoons of crushed garlic.
1 egg.
A few leaves of fresh parsley.
Extra virgin olive oil.
20 grams of butter.
Salt and pepper to taste.
Preparation:
- Cut the spring onion or onion into small cubes.
- Cut also the green part or the chives.
- Cut the fish and the surimi sticks into pieces.
- In a frying pan sauté the spring onion with a little extra virgin olive oil and a little butter.
- Add the green part, the garlic, the parsley, sauté until the ingredients are soft.
- Add the fish in the multi chopper and grind it to a paste.
- Do the same procedure with the surimi sticks.
- Place the fish and surimi in a bowl, add the sautéed vegetables, an egg and salt and pepper to taste.
- Mix everything very well until a paste is formed.
- Use an ice cream spoon to form the balls.
- Place them on a baking sheet and brush them with olive oil.
- Bake for 15 to 20 minutes at 180° C / 350° F until golden brown.
- They can also be fried in oil or in the air fryer.
