Fish maw AKA gas bladder is an internal gas -filled organs that helps the fish mobility. When you buy fish maw, there are two types. First is the dried one and the other is the dried-fried one. If you buy the dried one, you need to fry it first. Or you can spend a little extra money with less work and buy the one that already fried for you. I love this soup everytime I attend a Chinese or Vietnamese wedding. This soup is a delicacy and heavy on the pocket. It is worth it to make for the one you love. Here are the ingredients:
100g fish maw
20 quail eggs
2 enoki mushrooms, packages
1lb crab meats or 2 dungeness crabs
2 egg whites
3 tablespoons cornstarch, plus 7 tablespoons cold water
FOR THE BROTH:
3-4 chicken carcasses
1 tablespoon salt
1 onion, medium size
3 ginger, (1.5in each)
1/2 inch rock sugar chunk
1 cilantro stem, bunch
OTHERS:
fish sauce
cilantro leaves
black pepper
