Garlic sauce is a perfect accompaniment to roasted vegetables. Roast a head of cauliflower with some of this as dipping sauce and it will never cross your mind that what you’re eating is vegan.

Equipment Needed to Make Garlic Sauce
Blender (Vitamix is best)
Squeeze bottle to drizzle oil
Measuring cup
Knife
Cutting board
Strainer
Mixing bowl
Recipe for Garlic Sauce
4 cups of canola oil
1 cup of raw peeled garlic
½ cup of lemon juice (freshly squeezed if possible)
1 tsp of salt
Main Steps for Making Garlic Sauce
1. Squeeze ½ cup of lemon juice from fresh lemons.
2. Blend 1 cup of whole peeled garlic and 1 tsp of salt in a blender.
3. Drizzle oil onto the blended garlic until it forms a paste.
4. Once the blades of the blender are submerged in the garlic/oil paste, continue to alternate adding ½ cup of drizzled oil from a squeeze bottle with 1 TBL of lemon juice.
5. Watch for air bubbles as the sauce thickens and becomes pillowy. Continue to add oil and lemon juice until they are gone.
6. Allow the sauce to cool to room temperature before putting it in the refrigerator.

Looks good maybe could make a smaller batch using a immersion blender works good for mayonnaise. Definitely going to try this I will use avocado oil tho

Thanks for the question Rusty. I'd like to try with a healthier oil too, avocado or olive oil. For something that can't spin as fast as a Vitamix, you definitely need the full measure of the ingredients for this recipe to work correctly. Otherwise, it should be safe to make smaller batches. -BG
