Tinapa or smoked fish is fish that is cooked by steaming and preserved by smoking. It is a a popular delicacy in the Philippines. The fish commonly used are milkfish (bangus)or mackarel (galunggong). When you are away, you can try other available fish in season. Katerno Foods (KF) tried mullet and salmon fish bone. These are available and relatively cheap in Toronto, Canada. However, the focus of this video is on mullet. In the future KF will show how to smoke salmon fish bone.
Tinapa ingredients used are shown below.
INGREDIENTS:
3 kg ( around 7 lbs) mullet or any kind of fish
For the brine water:
1C salt,
8C water
4 cloves crushed garlic
1/2 T ground pepper
1T chicken powder
2 bay leaves
Additional ingredients:
cooking oil spray (for the cooling rack and smoker's grill)
cooking oil or olive oil (for brush the fish)
