Hello loves in this video you will see how I make the Nigerian isi Ewu. It is a popular dish in the Easthern part on Nigeria. (Igbos) but enjoyed by many.
For this recipe I used...
Half goat head
11/2 knorr cube
2 medium sized onions
2tbl spoon of edible potash
Utazi leave (a hand full)
1tbl spoon of Calabash nutmeg( ewu seed)
I tea spoon of crawfish
A pinch of salt
1 scotch bonnet
I cup palm oil.

belle recipe....now i know i can use dry utazi leaves. knorr wont be happy you call their seasoning cube maggi. also, we would like to know the quantity of oil and potash may be in the standard spoon and measurements. thank uu for this great video.

Love your demo. Classy lady. However why is the palm oil not and potash mixture not cooked for a while since palm oil has a taste to it. I am a Ghanaian and we always fry our palmoil with onions . Other than that I love your cooking. ❤💪🏾👌🏾

For this particular meal, if the palm oil and potash is heated for more than a while it will loose the curdling . If you notice, I placed it on fire after adding the meat for a few seconds. Also, not all palm oil have that raw taste. The once that were properly prepared dont really have that raw taste. ❤❤

Potash is different from akang. Akang is known as limestone which is what you're using. Limestone dissolves in water to form lime water, a complex form of CA(OH)2 while potash is itiat inung also called potassium chloride (KCl) which would not in any way coagulate oil the way limestone (CaCO3) would do. Please confirm for safety purpose before someone would use the wrong recipé.

Hello Nancy ❤. Preserving this when completely made is tricky. I'll advise you to cook the goat head a night before and store it in the fridge, then whenever a customer orders it you quickly prepare the sauce which usually takes less than 7mins to achieve. I hope this helps. Let me know how it goes. ❤❤
