Yes there are many steps, but the fact that they are recreating professional bread making techniques and tools makes sense. I tried this and this bread is really delicious. I made six loaves in a day and froze a bunch. This is all about the joy of the journey and not just the result.

So you happen to have lava heating rocks, a turning board, and a pizza peel & stone, just laying around to spontaneously cook six loaves of this fussy bread in a couple hours? Nice.

Sixpink oneblue I’ve done their recipe before without any of that. I think there are substitution that we can usually find at home. Let’s start with the turning board. They substitute it with a parchment covered piece of cardboard. I have a serving board which happens to be long and thin, it was adequate for the job. The pizza peel is a little harder, but instead of using the pizza stone, I substitute it with an oiled cast iron pan. I think most oven baking tray won’t be able to hold the heat as well, but it’s fine the last time I tried it. I just take out the cast iron pan and transfer the dough onto the pan and returning it to the oven. The lava rock might be the best steam generator, but I just pour boiled water onto any heated oven ware and place it at the bottom would have been sufficiently misty. A roasting tray works very well. The large surface allows a lot of evaporation.

It's bread FFS. Not a "journey." (BTW can everyone just give that word a rest for a couple years?) Italian food is all about making do with what you have. Simple methods using a few quality ingredients that are readily available. Yes, the Italians used lava rocks, but they used them they had them lying around everywhere - _tufa_ is what the entire peninsula is made of. That doesn't mean we have to buy $50 of equipment to make a $0.50 loaf of bread. You can get excellent results with the Dutch oven you already have. The key step is letting the sponge work for a long time.

My Chicken Vesuvio has mashed potatoes mounded into a volcanic shape, with a "crater" overfilled with sauce so it spills down the sides like flowing lava. Mine also has peas randomly scattered about, like small rocks.

Andrew Campbell it takes 20-30 cents to bake your own bread, store bought bread is $1-$5 depending on what you buy, so they’re really overcharging you!

I use a King Arthur dough whisk to get all the ingredients hydrated then use the dough hook.

It takes a lot of work! Even more than homemade regular bread. I've made the old fashioned bread at home and it seemed like a lot of work.

I think maybe it was the lighting when they were in the pan. I love chicken vesuvio and I don't get to cook as often as I would like to as I don't have a caregiver and the last caregiver did not want to assist me in cooking. Hopefully the next one if I get a next one it takes so long will enjoy cooking! :-)

Thanks so much. How would you have to change the recipe for the bread if you made it with 1/2 whole wheat flour? (or maybe even all Whole Wheat)????????

snoopaka Whole wheat flour will need a bit more water. I’d suggest doing it with 20% wheat your first time and see what you think. I might push it to 50% but I, personally, would never do 100%.

Hi American test kitchen. I love 💕 all you’re shows along with good technics. This bread 🥖 is so delicious. But is there any way to reduce the Salt 🧂 for this recipe?. and make it healthier?. The Amount of Salt 🧂 in this recipe is quite too much. I like to make this bread 🥖 for my husband but he can’t take more Salt 🧂 in his digit. Thanks 🙏

I have used tin foil and a thin linen towel to form this type of bread! :-) I hope nobody will be put off simply because they are missing a piece of equipment. :-)

I disagree with the comments saying you need all this equipment to make bread. No you dont. You dont need a stand mixer. You can need by hand, yes it takes longer but it still works. Also dont need the linen liner. With all that flour it'll be just fine on parchment. I'm more turned off this recipe takes a full day of dedication to make ☹😔

Where are we supposed to get a "big old bag"? I don't seem to have all these tools laying around. So I have to go out and buy all this equipment to make 2 loves of bread I can go out and buy in any grocery store? How big are the chickens those thighs came from?😁 I will be making the chicken.

Good luck getting dry yeast! OMG... I wanted to do this and all the stores near me are OUT. Even have limit (1) bag flour to customers now. Seriously, is someone scaring people on Facebook to buy up TP, Water, flour, yeast? Edit: I looked online (e.g. Kingarthurflour, etc) and all are out of stock, back ordered or some scary-named brands I do not trust.

Heavens, that bread looks amazing, but I think this is the most user-intensive and extra-tool requiring recipe I’ve ever seen on the show. Usually I’ll see some recipes and think “That’s just not worth having to clean my food processor.” But, sure, let’s go out during this quarantine and pick up a pizza peel, linen, and lava rocks to spend a whole day to make bread. I mean, we have the time for it, but still.

The bread looked great, but your Chicken Vesuvio was not the Chicken Vesuvio I've eaten many times at a local Italian restaurant. The dish they served here is bite sized white meat chicken(no skin) with potatoes in a white cheese wine sauce. Any idea what region this version of the dish is from?

I love bread and this does look delicious, but way too many steps and too many hours to create. I’ll go with the other bread bakers on RU-vid that create a loaf quickly. I have tried those others and they are very delicious too with much less work.

Plastic wrap makes a better seal. That, and there's no pressing reason not to.

While I don't mind the effort, this recipe is confusing and somewhat inaccurate. I weighed 2 2/3 cups of bread flour and it was 13.8 oz. They say it's supposed to be 14 2/3 (14.66) oz. So which is it? It would be good if the ingredients listed in grams and always weighed? Pane Flopese.

Why not just make freeform French bread and avoid buying all the extra equipment? If there's one thing I learned from Alton Brown, it's avoid unitaskers.

The beauty of these recipes has always been that they have felt attainable to the regular cook. I don't feel like that's the case here. 10 or 15 dollars for a linen just for bread may not seem like a lot to them, but to me that is a meal for my kids. I can't do it. Remember please ladies who your audience is.

I mean, it looks good, but there are far too many specialty items I definitely don't own for this to be a realistic bread recipe for the average home cook

Something about this bread seems counter-intuitive, less of sustenance and more of affectation. I have eaten--and have made--delicious, crusty loaves with open and irregular crumb, created with much less effort and equipment. I'm trying to imagine the circumstances in which this approach was first developed. Maybe as a punishment for a trainee-cook who couldn't learn how to turn an egg over easy without breaking the yolk? It certainly wasn't first made by the hands of a peasant wife trying to manage her home and family while putting the daily bread on the table. I do appreciate the tip about lava rocks, though. That, alone, was worth watching the rest of the overly indulgent development of the _prestige._

Their bread is full of chemical enhancements. Their bread is also not great, it’s fairly average.
