This is a walk through on how I make my kombucha that is low in sugar and keto friendly. If you have never made kombucha before and are intimidate by it, watch this video, it is easier than you think it is. Don't hesitate to ask if you have any questions.
Ingredients to make Kombucha:
SCOBY
1 cup cane sugar - amzn.to/3eA8RDG
1 gallon distilled water
3 Tbs tea, oolong, green, or jasmine green tea - amzn.to/31choIZ amzn.to/2Z35izf
1 cup kombucha (starter tea)
Supplies needed:
Gallon glass jar - amzn.to/2VbdWKP
Funnel
Plastic serving spoon
6-16oz swing top bottles (per gallon of tea made) or 3-30 oz bottles - amzn.to/37Xm8Ub
Linen cloth or cheesecloth
Rubber band
Patience!

I know making kombucha can seem intimidating at first, but it really is a simple process as long as you have patience! :) Please let me know your tips and tricks to making kombucha, I always love to hear what other people do differently.

Hmm..so just skip second fermentation. I was wondering about that. Trying to knock the sugar off as I was wearing a CGM and it did shoot up the glucose. I'm on maybe my 5th batch. The one using mango puree is easily my favorite but I know that' has to be high in sugar. Tasty though!

I add ice (filtered water ice) to my warm tea/sugar liquid to cool it down fast. Works a treat, just remember to leave enough room for the ice when adding the filtered water at the beginning. I also add Soda water to the kombucha if it tastes a little strong before I drink it. Thanks for the extended fermentation tip to reduce the sugar content. Happy fermenting 😄

Can't you add berries or keto friendly fruits ? or fruit tea?

As I talked about in the video, if you are doing a second fermentation, that is where you can add fruit if desired. I have never done this as it adds more sugar to it and that does not fit into my lifestyle. If this is something you would like to do, then after the initial fermentation, you would bottle the kombucha up and add desired fruit to the bottles and ferment again for 3-7 days in a cabinet or other dark location.

Very long winded. Need to cut this short to about 2 minutes. The rest was just filler. This is why you only have that many subs. People don't have time for all this. Also you need more info. You should've gotten the test strips formthe video. You say it's low sugar but I do t think so. That probably has a ton of sugar still.

I prefer oolong tea when making kombucha. Green tea is a close second though. Thank you for the kind comment, I glad it was helpful for you. Feel free to email me if you need a SCOBY, I have a bunch of babies growing quite large.

What about adding Monkfruit sweetener?

I often use monkfruit in other recipes, but would not recommend it for making kombucha. Although I have not tried it personally, the SCOBY eats sugar, and as monkfruit is not their natural food source, I'm not sure they would eat it and ferment the tea. I have wondered myself though if it would work. Researching it online seems to point to not using it however. If you do try it out, let me know how it goes!

Thank you for the clarification. I personally never add additional sweetener, but after fermentation, I can't see why it would be an issue if that's something you want

Thanks for the video,, is it ok to use a half cup of sugar instead of 1 cup? I like my beverages not sweet at all.

The SCOBY eats the sugar over the fermentation period. I would not lessen the sugar in this as that is the food source for them. In the end, it really isn't sweet at all, that is why some people do a second fermentation with fruit, sometimes adding more sugar or honey to the bottle, to add sweetness. The longer you let it ferment, the more vinegary it tastes as more sugar is eaten out and more fermentation happens. Hope this helps!

i use 2/3 cup cane sugar per gallon and it works just fine. but in the end it still has some sweetness even after 2.5 weeks fermenting to it so I'm extremely doubtful that all the sugar is eaten. i have about 15 scobys now. even after 2 months on the counter with no sugar added, the liquid they are in continues to grow more scobys.

I started mine with just sweet tea and added half a bottle of commercial kombucha,in this case GT.If it has live culture it will eventually grow a scoby.Keep in warm place

Isn't 3 week fermented kombucha too acidic?

As stated in the video, I ferment mine for 2-3 weeks to reduce the final amount of sugar. Do it to your taste. I would check it starting at 10 days and bottle it when it is to your liking.
