So many of you asked me what can be substitute, what’s alternative for Korean plum extract? To be really honest, there is not a perfect alternative since Korean plum extract is fermented and has very complicate flavors. I want to give a shot out to Maesilhood who sent me fresh maesil, the plums to me! I got a batch going with mystery plums that grew at my new house. I don’t think they are exactly the same species as maesil, but they are sour and firm with yellow flesh, so I’m thinking they might be similar enough. I’m hoping it turns out!

Steeping the korean plums in sugar extracts the flavors, which can be used in foods in various ways. If the plum / sugar gets yeast from the air, it will ferment, producing an alcoholic syrup. If you want to make wine, let it ferment with the lid off / loose.. If you want to make flavoring, put the lid on air-tight, let it sit a few weeks in a cool dark place; perhaps, even in a refrigerator. Occasionally, stir the mixture, from bottom to top; or, turn it upside down, to get the sugar evenly distributed. Monitor for sugar settling to the bottom. Stir. or turn upside down.

Ahhhh the few recipes I've made from you that needed maesilaek I've actually "substituted" with homemade plum wine, the kind made from having the ume steep in rock sugar and white alcohol for a year or more. Not the same thing but both made from sugar and ume so I figured it would be okay since cooking is one of those experimental things? Maybe? Haha thanks for the episode, it was very informative!!

It's out of season for me to buy fresh. I did not realize how easy it was, I would have done it years ago! Thank you posting it! Btw, don't let any of us change you, you are perfect just the way you are. Is there any way you can post some Korean old fashioned country food? Only Paik Jon Won does it very once in awhile and it is very hard to find.

I just want a better understanding at the 3 months strain it and discard the fruit and keep the liquid and then should we refrigerate it or can it be kept in the same place we kept it cool and dark? If we decide to let it ferment for 1 year than we don't have to strain it and we can still use it in our cooking and and does it still need to be refrigerated after that year? I am just needing a little more clarification if the home made version needs to be refrigerated? I am definately doing it. I don't think I have ever had it? Is it a common korean house hold ingredient?

The steeping of the plums is NOT a fermentation process. If the steeped plums are left in the jar, unrefrigerated, fermentation may begin. Fermentation turns the liquid into alchohol -- a wine. Thus, you can have a flavorful wine, or a flavorful syrup (for adding to foods or drinks).

I have picked my own fruit from a tree in our garden and we have the raw fruit sliced up (without the stones in any more) and in the freezer. Do you think this would work with the sliced fruit if I thaw it all out? I've been wondering what to do with this fruit for ages.

So after your done fermenting it for the year or three months do you put it in the fridge or can you still leave it out?

If it ferments, it's wine; then, you would do with it as with any other wine (a cool, dark place). If it's unfermented, keep it in the refrigerator.

Question to everyone: can you do this with other fruits? Can you take like American plums and do this process? This would be really cool if you can take raspberries, plums strawberries, apples, pears, etc and create extracts by just covering them in sugar. Is this possible? Or do you need alchohol?

I’m curious, do you know which poison is released, like chemical name(s) or medical name(s)? In 4 recipes I have seen, yours is the first that mentioned this, and I’m a doctor so I’m pretty curious about that. Also is it known how the poison is neutralized? I imagine it is digested by the fermenting bacteria.

After it turns into a plum wine, you can store it like any other wine, It will be a very sweet wine, so you will want to dilute it with something.

You can steep any fruit, or vegetable, to extract a flavoring. You can use sugar, or salt, or plain water. Some things you will only know if you try it yourself.

Hi Seonkyoung, I'm from Brazil and here it is really hard to find the green plum, but we do have a lot of the purple plums, would this be a substitute or I can only make it with the green ones? I'm not sure what is the taste difference between those too. Love your channel! ♥

It's a 1:2 ratio from watching the video. 1 lb of ume plums for every 2 cups of sugar. I used brown sugar to make it more on the healthier side, if that makes sense. But white sugar will do. :)

@@citybabygirl012 I've got bad news for you. :-) Sugar is sugar and acts exaaaactly the same in the body. Honey, brown sugar, white sugar, molasses, palm sugar, etc allllll have the exact same effect on the body. Sorry, but it's true.

I have maesil sitting on my kitchen counter for almost 2 months now. I didn't see any instructions that it needed to be refrigerated after opening 😭😭😭😭 is it still good to use? I just used a tablespoon for a recipe and I will be so crushed if It goes bad 😭😭

Myla Arroyo Sugar is a pretty good preservative, if there is no visible mold and it doesn’t smell/taste off, then it’s probably fine.

Why store bought plum sause look darker in color from the on the that was send from the farm? Which seems to be lighter in color.

The one she bought from store is older now. I'm sure when she bought it, it was a lighter color like the fresh one Maesilhood sent her recently. Mine are like that too. Just look at the colors of her homemade big jars. The older batch is much darker than the one she made at the beginning of the month (June), in Maesil season.

I could not find green plums, so I used regular ripe plums. And to avoid potentially poisoning myself, I cored them before covering them with sugar. I have some questions: 1 - does the syrup become bubbly after a time? Mine seemed effervescent. 2 - does the syrup stay clear the entire time, even the soy sauce looking one? There’s a cloudy growth at the base of the container (I think that’s the one producing gas)...not sure if that’s normal. 3 - does your jar ever leak? I’ve tried so many containers, and for each one, some liquid always seeps out...especially a few minutes after turning the jar for everything to mix. Any feedback is appreciated...from any who can answer.
