Mie goreng (fried egg noodle) is famous Indonesian food. Small budget, big flavor option.
INGREDIENTS
16 oz fresh egg noodle
8 oz boneless chicken breast, thin sliced
2 eggs
3 shallots
3 cloves of garlic
2 large red chilies (or to taste), seeds removed
3 small Thai chilies (or to taste), with the seeds
2 Tbsp soy sauce
1 Tbsp sweet soy sauce (or sugar)
2 Tbsp vegetable oil
½ Tbsp sesame oil
1 Tsp chicken stock powder
½ cup cabbage, shredded
½ cup scallions, sliced
Salt
Pepper
COOKING INSTRUCTIONS
1. In a food processor, combine shallots, garlics, small Thai chilies (seeded), large red chilies (seedless), and vegetable oil. Blend them until smooth.
2. Wisk the eggs and add salt and pepper. Cook and fold it. Set aside and slice them.
3. Stir fry the sliced chicken until cooked, then set aside.
4. In a wok , heat the vegetable oil with medium heat. Then add the ground spices and sauté them until fragrant.
5 . Reduce the heat to low. Add the cabbage, soy sauce, chicken stock powder, and sweet soy sauce. Stir them well.
6. Boil the egg noodle for 4 -5 minutes or until cooked. Then strain it well.
7. Add the noodle and sliced eggs to the pan, then stir them well.
8. Add the scallions and sesame oil.
5. Check the taste before removing the noodle from the stove.
6. Transfer the chicken noodle to a serving plate or bowl, and garnish sliced scallions and red chili.
7. Enjoy your mouthwatering stir-fried chicken noodle!
