This Chinese Milk Bread recipe was inspired by a viewer who wanted to veganize the fluffy buns and loaves from Chinese Bakeries like Maxim's. Japanese Milk Bread has the same soft texture that is like the cake of breads. Without being a cake. To be honest, I haven't tried the Japanese version my self but that's what I've been told.

Vegan Milk Bread Recipe
Makes 1 loaf or 6 dinner rolls

INGREDIENTS [US]
For Roux (Tang Zhong):
1/4 cup all-purpose flour
3/4 cup + 2 tablespoons soy milk (full fat)
Yeast Mixture:
1/2 cup soy milk (full fat)
2 teaspoons traditional yeast (one envelope)
1 teaspoon sugar
Remainder:
1/4 cup sugar
1 teaspoon salt
1 egg replacer*SEE NOTES BELOW FOR OPTIONS
2 1/4 cups all-purpose flour
2 tablespoons vegan butter (see notes)
Syrup wash:
1/2 tablespoon maple syrup
1 tablespoon water

For Roux (Tang Zhong):
40g all-purpose flour
200ml soy milk (full fat)
Yeast Mixture:
120ml soy milk (full fat)
7g | 10cc traditional yeast (one envelope)
4g | 5cc sugar
Remainder:
55g | 60cc sugar
4g | 5cc salt
1 egg replacer*SEE NOTES BELOW FOR OPTIONS
275g+ all-purpose flour
30ml vegan butter (see notes)
Syrup wash:
10ml maple syrup
20ml water

ABOUT KNEADING
For kneading, the first part will take about 5 minutes. I recommend resting the dough because this lets the gluten relax a little and makes the second kneading easier. If you are tired of kneading, you can even put the dough in the fridge! Just let it come back to room temperature before continuing. Then 5 to 10 more minutes of kneading when you are working in the vegan butter. For best results, make sure the dough is smooth and elastic before letting it rise.

NOTES
You may use bread flour instead of all-purpose flour if you like.
I used soy milk but you can use any type of plant-based milk you prefer. For this recipe, full fat versions are preferred.
For the vegan butter, you may use homemade or store-bought. If you can't get the hard-style of vegan butter, softer vegan margerines can be used.
You may also substitute with refined coconut oil or unrefined (for a coconuty aroma) but use only 1 tablespoon. You may choose to skip the overt fat but adjust your expectations for this recipe. It will not be as moist, tender, or stay fresh as long.
For sugar, you may use any type you prefer but keep in mind, it will affect the flavour. Make adjustments for sweeteners that are more or less sweet than regular granulated sugar such as stevia or date sugar, respectively.
*For EGG REPLACER, I used Ener-G powdered egg replacer with water. You may use 3 tablespoons of aquafaba or a flax egg (1 tablespoon finely ground flax meal with 2-3 tablespoons of water). If you don't mind the taste, you can also use 3 tablespoons applesauce or 3 tablespoons of well-mashed banana.

A NOTE ABOUT SUGAR:
Some white sugar is filtered through bone char during the purifying process. This is true of most white cane sugar and often brown/golden sugar as well. Other white sugars aren't typically filtered this way, such as beet sugar. The ONLY way to determine for sure if any brand of sugar is vegan-friendly or not is to contact the manufacturer directly to ask specifically about bone char (if not labelled as vegan). Fun fact: Sugar made in Australia is all bone-char free!
For those in Western Canada, Roger's sugar coming out of Taber, AB doesn't use bone-char either. The product number will start with "22" if it's from Taber. If it starts with "10," it's from Vancouver, BC where it is NOT vegan-friendly.
Many vegans do not mind using bone char processed sugar or may not have vegan-friendly sugar available to them. Please do not get hung up on this issue. Veganism is about intent, not purity.

i made these and they came out so so nice and fluffy! thank you so much for this recipe, here in germany they sell milchbrötchen - "milk buns" and they are very similar to this just a bit sweeter and i craved them often :)

I tried it without the egg replacer. It was so fluffy and moist. I think it's not necessary. I let my dough rising for 2 hours 😊

I’ve attempted this recipe 4 times and have finally gotten it right! I was a bit confused when I followed the recipe completely but my bread was coming out raw/underdone in the middle. Then I realized that my loaf pan was the problem! It was too small and wasn’t letting the bread rise enough or expand enough when baking. Found new loaf pans, made the dough, baked them, and perfection! This is a definite favorite in my house now. Even when it was underdone it was a favorite lol thanks so much for sharing the recipe!!

Thanks for sharing your experience, dearie. Bread recipes don't usually do well with single gluten-free flour subs since the gluten is a key part of the structure of the bread.

Lazy Spider Fluffy rice cakes can be achieved with fermentation and steaming to cook. Never baking. I hail from the southern part of India and our staple food is rice. Plenty of rice recipes there :)

Just made it, AMAZING!! Used lowfat cashew milk, and no vegan butter. Still turned out tender and fluffy, just as promised! :) will make this bread regularly i believe!! ;) Thnx!

Hi Mary! I tried this recipe and it was sooooooooooo good! I've tried so many fluffy rolls and dinner rolls recipes and they all have failed, turning into a dense hard "bread", if I can still call it that. But I tried this and the method and everything actually worked!!! Thank you so much and my parents loved it too!! Even when I used the stand mixer because I was lazy :/. Also, I actually canola oil because I didn't have any vegan butter or coconut oil on hand and added 2 T of flour to bind the dough ball back together.Thank you so much for sharing and I've been looking for the perfect recipe in forever because I also don't have bread flour on hand but still want fluffy milk bread.

I made this bread and it was SOOO good!!! Very time consuming, but very worth it!! I added undiluted maple syrup to the top and it kind of caramelized and it was scrumptious!

this is my favorite recipe on your channel, but it's going to be even more challenging to make now since 90% of my appliances decided to break right before lockdown :'D and with most shops closed up, i'm going to have to try this with only a rice cooker (no stove) and an air fryer as an oven if I'm going to have vegan milk bread this month! definitely worth the challenge. but your other recipes sure help a lot, like how to make aquafaba from dry chickpeas instead of canned, since stores are running out of canned food so fast. You have like a lockdown-friendly channel with very helpful tips for single-bowl recipes and/or limited ingredients/resources, etc. you're saving lives here girl, bless your dear heart!

Mary, thank you thank you so much. This is amazing, I am honestly so touched and excited to try out this recipe. I am just visiting Grandma in 2 days time so I'll definitely make it for her. Your commentary makes me laugh! I'm also struggling to learn the chinese characters as well (why are the squares so hard?). I hope this didn't hurt your hand especially with the kneading. Take care of yourself! I've heard that squeezing a stress ball often can strengthen the wrist muscles - that's what I do to help my carpal tunnel. Thanks again xx I'll let you know how they go!

you're the BEST! I made this yesterday and it turned out amazing!!! My sister is allergic to eggs and milk and so it was her first time having milk bread (she loved it btw). Even my parents who are kind of suspicious when I make veganized things said the texture was perfect and it tasted great! I definitely need to make some more for my friends!!! Thanks Mary! I made this last night step by step and it tasted delicious, plus it was super fun to make. My family kept punching my dough balls when I looked away and I had to re-knead it about a hundred times. :P It was really good. My brother kept taking chunks of it from me. I JUST MADE THIS AND IT IS AMAZING. I used aquafaba, bread flour, and brown rice syrup instead of maple syrup. Even though I rose them for too long they still came out suuuper yummy and fluffyy! Your videos always make my day, you're my all-time favorite vegan youtuber

I made this as my first time baking bread and it actually turned out okay! Thanks for the recipe I diverged slightly from recipe by letting the dough sit and rise 2-3 more hours (so total 4-5 hrs), because I was paranoid about not getting fluffy bread. I used this recipe because although I'm not vegan, I don't have butter at home, which is an ingredient the other milk bread recipes called for. I used the 1 tbsp coconut oil option as butter substitute. I also ended up having to add about 1/2 cup more flour bc dough was too sticky to work with.

Thanks for sharing, you made my day Mary with your sense of humor! Love your take on cooking and life in general. Definitely gonna try the bread rolls, but I may have to double or triple the recipe because my kids, especially my husband (haha) will eat them in one sitting. And this will trick them into eating healthier at the same time! :))

That bread looks absolutely glorious. Never thought I'd be drooling over a recipe video for bread. Can you add raisins without weighing the dough down?

+MsWannabeGamer Thank you, my dear! If you add raisins, a good time to do it is just before rolling up the dough. Sort of like how one would put raisins in a cinnamon bun. But not too many. I hope that helps. :-)

Redpath sugar is certified vegan and vegetarian friendly. So is lantic sugar (with the exception of the items manufactured in the Vancouver plant).

Thank you so much for this recipe! I had no idea it was possible to obtain this fluffy texture without using milk. I am in Germany and using it to recreate a vegan version of a typical Colombian bread called "pan trenza".

Just made these in an air fryer and they turned out just as heavenly holy moly, can't believe i can have this tender flaky goodness without an oven. I just made the dough a tiny bit more wet and baked them at 320F instead of 350 for 20mins AND a trick I used to keep them soft (cause air fryers tend to turn bread into hard rocks) is to pour some water into the base of the tray. APPROVED 10/10 my go to airfryer bread recipe now

Hey Mary! I love your all vegan take on asian recipes. I'd love to see your take on other asian desserts like taiwanese pineapple cake, sun cakes, moon cakes, and egg tarts :) This bread sounds like it'd be great with a sweet taro filling

Made this last night with coconut milk and I made one roll so it was bread loaf like. Long story short, it’s great. It’s super soft and tasty, I think it would probably do well frozen for later use.
