Make fresh homemade mochi using a stand mixer! Stuff the mochi with your favorite filling, dip in a savory or sweet coating, or enjoy in Japanese New Year Soup and red bean soup.

INGREDIENTS
450 g glutinous rice (sweet rice, mochigome) (= 3 rice measuring cups or 540 ml)
400 ml water (It should be 3 cup line for Sweet Rice in rice cooker bowl)
- Anko Mochi -
red bean paste (anko) (See Notes for homemade recipe)
- Kinako Mochi -
2 Tbsp Kinako (soybean flour) This makes 2 mochi balls. If you're making more, follow the ratio of 2 parts kinako: 1 part sugar)
1 Tbsp Sugar

My wife and I stumbled into a love of mochi recently. I'll be sure to try this recipe soon. I presume making matcha mochi is similar aside from adding matcha powder to the mochi while the mochi is being beaten in the KitchenAid.

I think its easier after you wash the sweet rice, put in the blender and grind it up, then cook it.

That flour is mochiko. But we don't make this type of mochi for New Years etc with mochiko, always with cooked rice. :) Maybe with the history of mochi pounding ceremony. It's easier to cook the rice than four mixture for a big amount of mochi.

Mochi-mochi is the best way to describe the texture profile of ugali made from millet. In my native Luo language we'd say "poth-poth". Language is so interesting. Thanks for the video. This one will probably take a lot of tries and patience before getting it right.

Beautiful video! Ive purchased them ready made and made them myself, but i suppose its something you either grow into from childhood or have a specific taste for. As for me, i did not find the taste or texture enjoyable, but this doesnt mean its a bad food or anything.

Thanks for sharing this method! The end result looks just like the traditional method! It looks like there was plenty of space in the stand mixer bowl -- do you think there would be any issues doubling the amount of sticky rice used?

To be honest, I'm not sure because I don't think my Kitchen Aid stand mixer can knead more mochi inside the bowl. With 3 rice cooker cups of sticky rice, it was working hard, and I wouldn't be comfortable preparing a larger amount. So I'd recommend preparing several batches.

have you tried a bowl scraping mixer attachment on your kitchenaid? it may help make the process a little easier instead of having to hand scrape the bowl every few seconds! love the video!

Thank you for watching! Actually I am afraid it will break. You need quite force to scrape down and the attachment won’t scrape off as it can for batter. Mochi is very sticky...

What will happen if I use the paddle attachment rather than the kneading hook? Will it be too mushy?

The dough hook is designed to work with heavier mediums like this. You might be able to use the paddle, but it'll stress your machine out. Better to spend the money on a hook.

It's not easier for people that don't have the hammer to just blend the rise into rise flour and use any of the microwave methods? It also will have a texture way closer to traditional mochi.

Yeah It’s really great, Our uncle would use a kine and usu to pound mochi, and when my sister and I tried it, We almost ended up smashing our hands

I’m trying this out myself but I think I cooked my rice with too much water, now my mochi is a bit too gooey. Is there anyway to fix this? Or should I just start over? I don’t have any mochi or rice flour :(

If you want to make mochi, it must be glutinous rice. Otherwise, the texture is completely different. We can't make mochi out of regular rice.

This looks so good and makes me want to eat some mochi. Sadly, i don't have such a machine. Would it be possible with a handmixer? If so, i imagine the whole process would be a pain to make...

Unfortunately, a hand mixer is not sturdy enough to "knead" or "pound" mochi. We can pound using a stick or rolling pin, but it will take forever... which is why we have a mochi machine in Japan. :( This method is just another use of a stand mixer... :) Sorry I can't give other alternatives...

You can, but not with this recipe. I have other mochi recipes that require glutinous rice flour. :)

Yes, you can do that. You can leave it out for overnight to 24 hours to dry, and then store in the freezer for a long time. :)

How long is the mixing time? 2:00~12:00 with hook attachment, 0:30 change to paddle attachment, is it mix over 10 hours? That's is very loooooong for 6 mochi!!

The rice washed too many times, it will effect the taste. Max 2 times is enough.

I just tried to make mochi with my stand mixer. My goodness that stuff is sticky! My mochi was not very smooth when it was done, but this was my first try. I couldn't find any potato starch and had to use corn starch instead to keep it from sticking to the sheet pans and my hands. Will that affect it? Also, is there a way to make it a little sweet before beating it? For example, could I add a little sugar to the water when cooking the rice? Last question, how big are your mochi cakes? Mine were all over the place and not neat at all. I personally think just making it was success enough for the time being. But each cake was between 3.5-4.5 oz. Is that too big? Thank you for the wonderful recipe! I plan to make mochi often since I love it so much. (^.^)~°

It's also add that if you use a very famous brand (KA) , the tilt head versions have nylon gears, so use small batches because the stickiness uses a lot of torque and you can strip your gears. If you have the bowl raise versions, they have all metal innerads, but let your mixer rest every now and then, even though they have thermal circuit breakers, it's good to give it a little rest now and then

@Educated Melanin it's true about Kitchenaid, but all their models are not created equal and they're not properly classified. The Pro model is made cheaper than the Artisan. Which is strange but the Kitchenaid Artisan is definitely their best model even though they make it seem otherwise. It's sturdier, it doesn't break as often, there are less returns in stores, and it is stronger than the Classic model which doesn't have enough power.

@@alexisgs8800 Wow, thanks very much for the information. I did not know this, so I’m glad I ended up with the Artisan model this year. I have used it almost daily and have been generally happy with it, aside from the pasta attachment not fitting properly. It wasn’t cheap, and even though I had talked to customer support before purchasing the attachments from them, and they assured me that they’d fit my current model. They didn’t. The screw wasn’t long enough, nor was the hole to secure it long enough. It made me doubt whether the product had sufficient QC to warrant the high prices.

I made your mochi ice cream recipe a few years ago. I had never made mochi before, you are right...it is the stickiest food on the planet! Lol! It was so delicious! I want to make it again since making those perfectly round little cakes takes some practice. Thank you for showing how to make this in a stand mixer. :)

I suffer from anxiety and often times have panic attacks out of the blue, and I’ve found that watching your videos, about cooking helps to calm myself, and has given me an amazing hobby to explore.

@@Nemesiz00 if by help you mean therapy, therapy is very expensive and some people don't have the money or even time for that sort of thing,, not to mention therapy does not work for everyone so if watching cooking videos helps this person what's it to you?

You need Minerals.. 1000 mg of Magnesiym works wonders for me.. they stay away as long as I take them every other day or so.. every day stops my hubby from twitching all night ling.. 100% works for us.

@@Nemesiz00 this comment is uncalled for because what if this person is getting Professional help or doesn't have access to it, and as someone who does get professional help i can say we still get random anxiety attacks and calming videos like these do help cope with it.

I love the straightforward format, clean editing, and well paired music of your video. Thank you for the recipe. I absolutely love mochi. It's one of the few treats I can indulge in (I can't tolerate bread or dairy), and I love the mochi mochi texture.

I love mochi! My family used to steam and pound mochi the traditional way but my relatives have since past away so me and my sister use a mochi machine. We wash and soak our rice for a day. It’s a tradition we do every year so that we have fresh mochi for our Ozoni soup for New Year’s even here in Hawaii. Thank you for the option to use a stand mixer.

Even in Japan, we are losing access to Mochitsuki because older generation pass away and not enough new generation take over this tradition. It's sad, but the food tradition still stays with mochi pounding machine! Yes, to steam mochigome, we need to soak the rice overnight, but bread maker (with mochi function) and rice cooker should not soak the rice at all (if anyone interested, it's on the blog post). Hopefully more people will be interested in making mochi with a stand mixer and mochi tradition will continue on!

Wow, very nice~~ My mom used to make mochi every winter when I was young. I miss that time. I got a stand mixer a few weeks ago. I will give it a try some time.

This video was so relaxing to watch. Ichigo Daifuku was my favorite type of mochi. We had in summer in Tokyo Nakano-ku. :)

Hi I have two questions. I don't have rice maker, can i boil rice like for sushi? And second one, can i use sushi rice? I can't find mochi gome anywhere close to me or in good price :(

You can cook in a pot over stovetop. However, you will need glutinous rice (sweet rice or mochigome - whatever called, same thing) to make mochi. If you cook rice (sushi rice), it will not become mochi.... Sorry....

I don’t know where you live, but in the UK it’s called ‘pudding rice’ - you might be able to find some fairly cheaply?
