Ive made pumpkin raisin, strawberry cheesecake, banana nut, blueberry. They all turned out well. If you have enough left over make into little loafs. They have little loaf pans. Great for freezing too.

I've made muffins with Craisins. Also made them with banana using 1/2C crushed pineapple and 1/2C orange juice instead of milk.

My Granny used to put some of her homemade lemon curd in her sponge buns ( or muffins in the USA). I would have thought that would work for your lemon and poppy seed muffins . It didn't appear to affect my Granny's mixture.

An easier way to fill your muffin cup try a large cookie scooper. It makes a perfect amount 😊❤

What if you want to make it sugar free and a healthier oil like coconut oil?

Soft butter would be a good idea. It will also give it flavor. Got use real butter.

If you fill them up to the top you will get a hugh muffin top. If fill the muffins 3/4 filled you get a smaller muffin top.

Addition of Raspberry extract!!!!!!

Lemon juice and cream would make buttermilk. Muffins would have buttmilk favor. Yummy yummy 🎉
