I've just made this vegan by using vegan cream cheese instead of goats and flax "egg" for the wash plus added a layer of mashed potatoes, so the mushroom chestnut mixture is rolled inside the a layer of mashed, and then pastry as outer layer ...amazing!

Mmm my guess is no, much as it’s great for “whipping” I think it might burn. oat cream or similar would be better

Made this for Christmas as a main dish for my vegetarian GF/a side for the rest of the family! One thing I wish to note; I think I used half of the ingredients listed in this video and still I had way too much stuffing. Also, Chestnuts are difficult to get here in the Netherlands, but I substituted them with walnut which was also very tasty!

Made this today for our Christmas meal. Substituted grated cheddar for goats cheese. Made it in the same format as Jamie Oliver's pithivier pie rather than as a roll. Absolutely beautiful. Excellent flavour. Compliments all round.

I just love these recipes on Waitrose tv even though I will never get around to trying them as I struggle with bad health and find it difficult to cook most of the time.

thanks waitrose. speaking from a 2 Rossette cheffing background. only thing i can add is make a large crépe suzette (thin pancake) and place this on the sheet of pastry before adding rolled filling this ensures bottom of pastry is crisp and not soggy as the pancake crepe will absord any moisture from filling and not soak into the pastry. gordan ramsay does this when making beef wellington to absorb meat juices same principle applies here as mushrooms will leak a lot of juices too regardless of precooking

WAKE UP!!! Good tip. If the mushrooms are grilled or roasted there will be a minimum of juices leaking

I am shaking my head. I make a version of this with different vegetables and I go though so much more fuss and fiddle. You just NAILED that! I am abandoning mine now and will take up yours. I feel so lucky I found this. However, wondering if a little vent in the top would be a good thing.

Yup, it would. It would allow the hot steam to escape so that the pastry doesn't become soggy from within..

I made this recipe in 2018 to accomodate my vegetarian daughter for Christmas dinner. Oh well... Let's put this way: I don't roast a turkey anymore .. all the family prefers this ☺️

My first fully vegan Christmas dinner, I made this for my sceptical family. I served it with rosemary roasted potatoes, roasted sprouts with a balsamic glaze, raw cranberry and orange relish, cranberry sauce, a bread and veg dressing, green bean almondine and homemade bread rolls as hubby is a carb fiend. The family was head over heels for the Wellington and it is our standard Christmas centrepiece every year and they all look forward to it. I make a few smaller ones in individual pie dishes to have in the new year too, it went down so well.

What temperature you bake it for 30 minutes? And do you ever broil it to become golden or just baking does the job?

You may also want to try boiling cashews for a quarter, then process them and after they're cool, add some probiotics to culture it overnight. ;)

Can you make the mixture up the day before and leave it in the cling film in fridge overnight. Also what temperature do you cook it on?

The 'chestnut' mushrooms appear to be what we in Canada call 'cremini' mushrooms. Can you provide any further information?

Can someone tell me if this the exact one they sold in Waitrose a few yrs back? ( It was absolutely delicious). If so, I don't remember the goats' cheese in it as generally don't like it!

Sorry for the delay - the best option would be to make the filling the day before then just wrap in the pastry and bake when ready to serve. However, if time is an issue, it can be made completely the day before and kept uncooked in the fridge and then baked when ready to serve

I much prefer dried time over fresh thyme. The flavor of thyme becomes more intense in the drying process. And it lasts much longer.

There’s an earlier reply that says you could make the filling the day before and then assemble it before baking. I’m making this for Christmas this year and plan to make the filling on Christmas Eve.
