Ingredient
• Mutton ----- 1 kg
• Onion ----- ½ kg [ slice]
• Tomato ----- 4 no’s [ chop]
• Ginger Garlic ------ 3 tsp [ paste]
• Gr chilly ---- 1 tsp [dardara grind] [5 to 6]
• Gr chilly [whole] ---- 2 to 3 [slit]
• Turmeric ----- ½ TSP
• Coriander pwd ------ 2 tsp
• Black pepper pwd ----- 1 tsp
• Jeera pwd ------ 1 tsp
• Garam masala pwd ----- 1 tsp
• Red chilly pwd [ Kashmiri] --- 1 tsp
• Yogurt - 150 gm
• Ginger - small piece [ cut julienne]
• Coriander ---- small punch [chop]
• Salt ---- to Taste
• Kasturi methi ---- little
• Nutmeg ---- little
• Meat masala pwd ---- 1 tsp [readymade]
Whole spice
• Cinnamon ---- 3 to 4 [small pieces]
• Clove ------ 7 to 8
• Black pepper corn ----- 10 to 15
• Star anise ---- 1
• Black Cardamom ---- 2
• Gr Cardamom ------ 3
• Bay leaf ---- 2
Cooking time: 45 min [ slow cooking]
Method
• Take a pot and put oil 5 to 6 tbsp
• Turn on the Heat, when oil is hot
• Add whole spices
• Then add the slice onion and sauté it till translucent [ little brown].
• Add Ginger Garlic paste, sauté for 2 to 3 min.
• Add chop tomatoes and sauté till tomatoes are cooked.
• Add the dry masala [ Turmeric, coriander pwd, jeera pwd, pepper pwd, red chilly pwd, garam masala pwd and little nutmeg pwd] and little salt.
• Sauté it for 2 to 3 min.
• Add the mutton and bhuno with the masala nicely on a slow flame, stirring time to time for 4 to 5 min
• Add yogurt and cook for 4 to 5 min
• Then add hot water 2 to 3 cup and give a stir, close the lid and cook for 25 to 30 min on a slow fire [ stirring time to time].
• After 30 to 40 min remove the lid and put 3 slit gr chilly, little ginger julienne, Turn the flame medium high
• Add Meat masala pwd 1tsp, Kasturi methi, and chop coriander mix nicely.
• Turn off the heat mutton bhuna gash is ready, serve hot, and serve with Butter naan, kulcha, Rice pulao.
