Praline Candy Troubleshoot- If your Pralines come out too soft like caramel , no worries the issue can be solved. Do not throw your candy away. You'll have to melt the candy in the evaporated milk. Add 1/3 cup evaporated milk and 1 teaspoon vanilla extract and let come to a simmer. Add the candy pieces and let sit for 1 minute. From there carefully stir the mixture until the candy has melted. Once the candy melts, let the mixture simmer for 6 to minutes while stirring continuously. Transfer back on to parchment paper and let set. Hope this helps. Thanks!
Can everybody give that glass table a round of applause. He be beating the hell outta that table. I've been watching Charlie for years now, and that table is the truth.
Possibly the best cooking channel out there! Simple and clear approach to imtimidating recipes. This channel is why RU-vid was invented. My family loves you, Charlie.
The boil pattern at 3:10 is the most helpful tip! Since electric and gas stoves cook very differently, the amount of time will differ. Knowing to look for "pops" is the magic key to knowing it has cooked long enough. I've yet to hear this described on any other recipe. Thank you! Extremely helpful!
Cooked mine until the same pattern and it came out like caramel, I needed a thermometer to measure it to 240 degrees before it was done, this temp came after that boil pattern.
My mom is a New Orleans native, I love pralines! I have tried every praline recipe I could find but my favorite type of pralines are creamy ones! I found your recipe and it is AMAZING and tastes exactly like my favorite pralines!!! Thank you so much for sharing this, as a service member who lives overseas, you just brought me a taste of home!!! Tip: I didn’t have any evaporated milk so I made my own using regular milk boiled down and it worked perfectly!!
That's awesome. I'm happy that you found this recipe video and that the pralines were successful. You're welcome, not a problem. Thanks for leaving feedback!! 🙂
I was born in New Orleans and grew up in Baton Rouge. Yes, we called it Pah Cone Candy in Baton Rouge.. I now live in Macon, GA and nobody makes it here. Perhaps I should start selling it here.
@@CharlieTheCookAndrews you make it look so simple, quick, easy and delicious as everything you cook! I'm a huge fan! You're AWESOME #keepdoingwhatyoudo
These have the BEST flavor, less ingredients and easy to make. NO candy thermometer, only granulated sugar. I have tried 5 recipes before this one. I have discarded ALL others. Thank you.
Cousin the praline looks and I know they taste good. I used to make these alot and give them out of gifts in a cute gift box especially for holidays but once I became paralyzed I still make some but in the microwave with condense milk instead of evaporated milk. Anyway I also wanted you to know I was a little down in spirit but when I saw your smile it gave me a boost. Keep smiling!
Thanks Linda! A lot of people do that with the gift boxes for the holidays etc! Wow you make them in the microwave? Well yeah that makes sense! Awww I am happy that my smile made your day! I won't ever stop smiling! Thanks!
I use this recipe every year because the pralines come out perfect! When you start pounding on the table I always crack up but that’s when you KNOW something’s good 😂
My momo taught me how to cook the pohcon candy and I forgot how to do it she older so I'm the cook now but I found you and I'm glad I did to cook this candy cause I cant back be back and forth to new Orleans everytime I want it Texas don't have our candy so I rather make it my self.
I appreciate you for sharing your story. Happy that you found this recipe video as well and hope it helps you. If you decide to try the recipe, let me know how it turns out. Thanks!
Chef Charlie this is perfect!!! I have been so ashamed for years, being a New Orleans native and not knowing how to make pralines 😢😂 You took all the mystery out of the recipe and process! Thank you, thank you, thank you😃😂😁!
By far the best recipe ever…and I’ve made pecan candy (not pee can😂) using this recipe for family & friends for quite some time now and they’re never disappointed….just finished a batch a few minutes ago that someone requested. I love giving these as gifts. Thank you Charlie for this recipe especially, and for so many others!
I'm happy to hear that you enjoy the recipe and that it's a success each time you make it. You're welcome, not a problem. I appreciate the compliments. Thanks!
Hi Charlie, I'm a new subbie. I love your channel, I've been binge watching all weekend. my grandmother was from NOLA, RIP Chanie Brown, aka "Mama". Mostly all your recipes remind me of her. She made the best pralines, shrimp gumbo, jambalaya, shrimps & grits, stuffed peppers, the list goes on. New Orleans has the best food in the world, tfs!!!
Heyy Tatiana! Thanks so much for subscribing! Happy to hear that you are enjoying my channel thus far! Wow! It feels good knowing that my recipes remind you of your grandmother. I'm sure she threw down in the kitchen!
Yes, she sure did throw down in the kitchen. Miss her so much, and her cooking. I know you could throw down in the kitchen too, I could tell. Everything you make looks so delicious!!!
I just tried this recipe! They taste great! I've tried so many times to make these and failed until now! Thank you Charlie! I found your video just in time for Christmas 😊
Finally a simple to do pecan praline recipe..one that I can definitely make without any errors.... One of my favorite candy and for years I have try to master this recipe but could never get it right..this is right on time Charlie as the Holidays will be approaching soon and this could be a added bonus to my dessert dishes.. You're the greatest Charlie!!! Thank you sweetheart 😘
Yes it's really simple! I like Pralines as well! Don't feel bad as I used deal with the same thing. My candy never turned out right. I kept practicing until I got it right! Thanks for the compliments!
Thanks for making this recipe so easy. I followed it and the praline candy turned out perfectly. I had to FaceTime my folks home in Houma and Thibodaux to show them- I felt so proud. LOL
I made this recipe today, and they were perfect consistancy. I saw other videos that added more sugar, but that's not the way I like them. These taste exactly like the ones I get when I go to New Orleans. Very creamy
Thank God and thank you for sharing this recipe. I never thought I’d see the day where I was making “good ass pecan candy”. 🤭 I have always been able to tell the difference between regular pecan candy and the really good kind. The good kind is hard to find. I came across St. Bernard’s and fell in love. But I knew that it was possible for me to replicate it, which is much cheaper and healthier as well I’m sure. Now, I never have to buy anyone else’s pecan candy again. After endless recipes, I found you and now my search is over. You’re doing God’s work 😊
You're welcome, not a problem. I'm happy to hear that you found this video as well. I also appreciate you for sharing your story. If you decide to try the recipe, let me know the results. Thanks a lot!
The first time I ever tasted these , they were from a New Orleans native. I worked with her and they were amazing. I will make these soon. I have everything I need in the kitchen
Now I buy these at Papa's Barbeque at the Airport her in Houston. I have yet to make theses as an adult. When we were kids we made these all the time. I think I might try it Charlie
I’ve used this video multiple times and every time everyone has loved them!! I always send them to your page. Thank you for always knocking it out of the park!!
That is awesome. Happy to hear that the Pralines were successful and that you enjoy the recipe. You're welcome, not a problem. Thanks for leaving feedback!

I've visited your amazing city twice, but I've yet to try these... which I regret because they were highly recommended. Thanks for this! Perhaps I'll have to give it a try.
I made some last night following your steps and I must say I’m proud of myself cause now I don’t have to spend money on something I can make cause Charlie, a NOLA Native, taught me lol. Thanks Charlie Everyone that tried it definitely enjoyed it.
That is awesome. Happy to hear that the Pralines were a success and that everyone enjoyed them. Thanks so much for leaving feedback my fellow New Orleans native!

Lol I made some 2 nights ago, I experimented by using condensed milk instead of the carnation milk, I also used cashew nuts instead of the pecans, and they were so delicious, It was my intention to save a few for my son to taste but lol I ate all of them. Making almond brittle, Chocolate covered cashews and raisins etc. tonight. not making any more of the pralines until Christmas eve. night because I have no resistance when it come to them.
Oh my God, My Great Aunt from Mansura use to send me shoe boxes of that pecan candy all the time before she passed. I could never seem to get that recipe like she would make it. Everyone loves when I hit the table lol That would really be shocking if the glass actually broke. Wow cool. Yeah watching someone make the pralines can make you crave for something sweet! You're welcome!
Many blessings to you for sharing this recipe. I been craving some real pralines new orleans style...missing my hometown delicacies! Here in Texas fake pralines sold everywhere and of course these people cant tell the authentic pralines. I made this recipe and was soooo happy! Never thought I'd ever be able to make these. I am so happy about this! You dont even imagine, thanks a lot!
