Notes:
When mixing the flour in water (for the filling thickener), add the flour to a small quantity of water first then add the remaining water later to avoid lumps.

Nigerian Meat Pie Ingredients:
Nigerian Meat Pie Dough:
•Plain Flour -- 1 Kg
•Baking Powder -- 1 teaspoon
•Margarine -- 500g
•Salt -- 2 pinches
•Cold Water - ½ cup | 125 ml | 4.2 oz
Nigerian Meat Pie Filling:
•2 medium-sized Irish potatoes
•2 medium-sized carrots
•500g of minced meat (ground beef)
•1 medium-sized onion
•1 cooking spoon of Vegetable Oil
•Seasoning - 2 Maggi / Knorr cubes and 1 teaspoon of thyme
•2 tablespoons of plain flour (thickener)
•Cold water -- 1 cup | 250 ml | 8.4 oz
•Salt -- to taste
Ornamental
•1 egg (for rubbing on the pies)
If your meatpie is too hard, it may be because of any or a combination of some of the following:
1. Your oven temperature was too high. The oven temperature should be 170C or 335F
2. You baked it for too long. Once the meatpie is light brown, it is done. And don't leave it inside the hot oven when done because it will continue to dry up even though you've turned the oven off.
3 . You did not use enough margarine. It is 500g of margarine for every 1Kg of all purpose flour (plain flour).

This will be used to thicken the filling. 04:32 Once the contents of the pot boils, add the carrots and potatoes. 05:03 Stir cover and cook for about 3 minutes. 06:05 Add salt. 06:21 Add the mixed flour. 06:39 Stir and the filling is ready. 06:48 Set the filling aside to cool down. 👉Making The Dough: 06:53 Mix 1kg (8cups) plain flour. 07:08 Salt 07:15 Baking Powder 07:45 500g margarine 08:54 When you get a crumbly texture, add half a cup of water. You can also use milk. 10:00 Mix till you get a ball of dough then tranfer to a table and knead till smooth. 10:25 Grease the oven tray with margarine. Hi, I just wanted to say thank you for all your delicious (and easy to follow)recipes. I am american and my husband was born in Nigeria. Unfortunately he has not been home in about 15 years. About four months into dating he had a birthday and I wanted to make him something Nigerian. I made these meat pies. When he tasted them he said it was the moment he knew he was going to marry me. 6 years later we have now been married for 3 years and I have since made many more of your recipes. Meeeen! My mother was an Home Economics teacher and did she cook this for us back in the day!! Everytime I had fever, after all the chloroquine and cold baths and all, what always settled the matter was a well-baked meat pie! Chai! God bless my mother!!

The crust is thick on mine. At first bite it kind of reminds me a bit of a pretzel taste. As I continue to eat it though, I notice I particularly enjoy the crispness of the crust. I realize that the Thyme really is a deal maker on the recipe. Thyme adds the perfect complement to the pie...a light, almost aromatic taste unlike anything I've ever had before. The only way I can describe it is a mix between the soft caress of a flower's smell with a portion of the sweetness of a blade of grass on your tongue. Certainly interesting. I made my pie with chives, ground beef, and russet potatos because I didn't have any carrots or Walla Walla onions. Just took another bite...I gotta say WOW! The crispness of the bread along with the softness of the potato...goes really well with the beef flavor. Thank you! I really enjoyed this, a fun little project. I got about 8 still on the pan for when they come home. One more thing I realized is that when I'm cooking or baking, I get this incredibly happy feeling...it's beyond words. Maybe gratitude, as well, very thankful. So thank you for this video - You've made me smile a lot today. Good job : )

Yes, they are very easy! Glad you found the video helpful! :) You can make them without baking powder actually. But you need to bake at a slightly lower temperature (say 150 deg C) for best results.

I wanted to throw a very special party, for my dearest and close friend who was born and raised in Nigeria. So I hit the internet, and learned enough Swahili to ask his mother for his favorites foods AND her recipes. I created a menu, purchased certain items that are classic in Nigerian cooking, I wanted it to taste the same as when he was young, I made a few variations, (I have to its just my nature LOL) I use Cornflour (Corn Starch) instead of flour to thicken, strangely it made a HUGE difference, or even potato flour (potato starch) each type has a different taste and consistency Why? No clue I digress After practice, and 5 pounds of weight gain from "Testing" I threw him the surprise party, only he figured something was up, because he SMELLED it from down the hall, it didn't matter because I don't think he spoke for hours, he just grunted in immense pleasure, smiling and in utter disbelief, it was the best gift I ever got. Nothing better than someone who enjoys your cooking but that's just me :) Plus I skyped his family to sing Happy Birthday. We cried! We ate! We laughed, it was GREAT

I don't understand what you mean by script because if you can't see the annotations I already have inside the videos, how can you see the "script"?. Thankyou for this instructional video.. I made these meat pies foe the very first time in preparation to learning Nigerian recipes for my fiancé who is Nigerian.. Im African American.. And he was AMAZED at how on point they came out.. I made too much of the beef so i wind up making almost 30 of them and shared with my Childrens neighborhood friends who in fact thought they were purchased out of the supermarket. woohoo! love how you got ur pan frying and cooking. love the way you work with your hands to get the dough done. coz for us malay cultures we did the same too. you called it pie we called them "epok-epok" or in english curry puffs. for us malays, we usually put different fillings in them. we have sardines with onions/ potato filling/ or egg with diff vege in it. totally can relate this. Hi from Singapore fan here!

Really enjoy your video approach! Not only was it a nice dish idea, I also liked just watching the whole process made from scratch rather than the typical "corporate kitchen" style vids where they show each step already done, and they probably just throw out the unfinished steps. I haven't read through the other comments-- perhaps this has already been mentioned. But one thing that would be nice while watching this (because of the length) would be to mix in some different music, rather than repeating the same track. THANK YOU for putting these together!

You can't go wrong with meatpie dough. Just make sure you are using the correct quantities of the ingredients. I listed those in the description of the video. :)

I've made meat pies using this exact recipe as a base. I've used deer, clam(not the best), chicken, lamb, and pork. I would have to say that deer meat was the best one by far. thanks for sharing.

ground lamb... ground sausage.... we hunt so I've tried it w/ deer sausage and pheasant all good I did a just my spices and seasoning vegetables to each type of meat😆

I'm glad you find the videos helpful :) And no, it's not a lot of work, it looks like it is because I showed every single detail in the video. You'll see that the steps are not so many when you actually do it. Sure, you can replace the beef with fish but it wouldn't taste the same. And no, you can't fry this dough because it is not mixed for frying. We have a version of this snack that is deep-fried, known as fish roll. The dough for that one is mixed differently.

Thanks for this simple and educative video. I know it probably will taste great. I, however want to advise you on certain things. Most of the equipments you will need for making this can be found in the stores; the cutter, the mixer, brush etc. These can be used rather than your hands and pot lids. Otherwise, I think its a good job. Can we also call this meat/potato/carrot pie rather than meat pie?

While this is great advice, I love that she did it that way because it shows alternatives. Prior to watching her video, I had watched another one and all I could think about was all the extra things I had to buy, especially the mixer. Not everyone has access to purchasing some of these items for next to nothing, or is even interested in doing so. So, thank you lady for smarter home remedies.

I find this method of cooking sketchy. If i was making this for myself then no problem, i wouldn't care about using equipment such as mixers and stuff but otherwise i could not cook this for others or eat it if it was made in such a fashion. I guess it depends on the individual. This looks delicious though.

No, I always state the ingredients in my videos and in the description of ALL my videos. You are just not reading them. Click "show more" under the video to see those. I just wish that people should take a moment to read the info available to them or at least read other comments first to see how many other people have the same complaints as they do before complaining. But then such people always believe that the problem is not with them but with the video!

I've watched several of these recipes and I just have one criticism. CHANGE THE MUSIC!!! IT'S DRIVING ME UP THE WALL!!!! Other than that, I like the food.

I like the music - I know it's kitchy, but that makes me think of this channel and good food. Look at foodwishes channel - I've heard his theme music on larger platforms like TV, but I associate that theme music to his channel. Just know that many YT channels are home-based operations with very limited budget. As long as the music is not obtrusive, it adds to the atmosphere.

i just went to heaven and came back.. this looks soo yummy.. however! i'll have to use my own version.. Ground Turkey rather than the beef, Sweet potatoes rather than than white potatoes, and whole wheat flour.. i'll try it out and hope it taste the same.. good work!

Why is it difficult for the tutor to speak? u don't keep quite when teaching on a platform of this nature. I personally didn't find this helpful.

Aunty flo good evening ma. This is the first video I watched of you. I had just started living on my own and couldn’t cook much apart from rice and stew and jollof. I said to myself I had to learn how to make Igbo soups just Incase Mr. Right shows up especially since I wanted an Igbo man. I met my husband the following year. I rewatched this video today and it brought back so much memory. God bless you for creating this channel bcos it made so much impart on my cooking skills. The website was helpful but you RU-vid channel is a different game.

I did not add eggs to the dough, I only rubbed it on the meat pies to make them look nice when done hence why I listed it as ornamental ingredient.

I am amazed! This is pretty much the same recipe of the Argentine country empanadas, except that we do not use margarine but beef lard and instead of closing them with the fork we make many small folds. Also, we don't use broth cubes but make a strong juice by browning the meat itself. Thank you for the recipe.

you can start making the filling by dry frying your mince then adding the vegetables and other ingredients. By doing this, you are reducing how much oil goes into the meat pie as the mince will release oil while cooking it. thank you for inspiring me to make this lovely snack

This has been turning out great for me. I substitute margarine for olive oil sometimes to reduce fat content and it turns out the same. Never knew I could make this myself at home till I watched and followed this. Thank you!

I'm also an average Joe or Jane like you. Remember i commented on how happy i was when i tried your recipe a few months back, then it didn't come out the same when i tried it again but i have experimented since then and i found out that what made the difference in your recipe to mine previously was the heat. I'm only sharing my own expenrience so others can borrow from it. P.S: I didn't JUMP IN as you thought Mrs, i only gave my comment. Oven (fan or regular) temp does matter when baking pastry

I especially like this pie crust recipe. I think I will use it for fruit pies also. Putting baking powder in the crust, that is a new tip for me. I am sure that works well. Thanks much!

This channel is appropriately named Nigerian Food Recipes. Typical Nigerian cooking with 2 stock cubes in EVERYTHING no matter the quantity and general over spicing. You tried, sha. Very good effort.

Yes, you can. I do that all the time. :) For best results, dish them in single use containers so you only defrost the quantity you need at a time. It's not good to defrost and refreeze it. Hope this makes sense.

Yay! Congratulations! We've taken the 2nd step towards this great task :DDD Without baking powder, the meat pie will be as hard as rock. And I find it hard to believe that you could not find baking powder in all the Tescos, all the Asdas, sainsburys etc in London ... mmmh, it's the most basic ingredient in pastries so it is not hard to find at all :) Look harder, even if it means asking store managers :D

Once it has margarine written on it, you can use it for this recipe. A popular brand is Flora but you don't have to use that brand. I used to live in the UK and you can get margarines in Sainsbury's, tesco etc. Ask the store manager if you have to but it is usually on the cheese and butter aisle
