My mom makes something like this and she calls it Cherry Delight.

I always need to convert recipes to sugar free which works most of the time. I will use one of the pecan or walnut crusts and different sugar but I can’t use the vanilla chips as there is no substitute for them. Can I illuminate them or use something else?

You could cut your stuff into bars/squares _BEFORE_ putting the cherries on top. Then put your cherry topping in a dish and let people top their own bars with cherry filling before chowing down on them. 😁
