ODEN RECIPE (serves 4 to 6 people):
Broth:
- 1 cup kombu dashi (kelp broth)
- 7 cups water
- 1 tbsp mirin
- 2 tbsp sake
- 5 to 6 tbsp soy sauce
- 1 tbsp sugar
- 1/4 tsp salt
Ingredients:
- Daikon (white radish), peeled and chopped
- 3 medium potatoes, peeled and chopped
- 1 cup burdock
- 6 boiled eggs
- chikuwa
- oden set
- konnyaku
- beef pieces (0.5kg or 1lb)
- ganmodoki (tofu fritters)
- aburaage (fried tofu pouch)
- kirimochi
1. Boil the daikon in water that was used to wash rice. Cook for 15 min (to remover bitterness) then let it cool completely.
2. Pour boiled water over the fish cakes to remove the oil. Let it sit for 1 minute and then drain the water.
3. Place konnyaku in boiling water for 1 min and then drain.
4. Place aburaage in boiling water for 1 min and then drain.
5. To create mochi packets: cut the aburaage in half and insert mochi pieces inside, seal with a toothpick.
5. Put fish cakes and ganmodoki through skewers and set aside.
6. In a large pot, boil the ingredients for the broth.
7. Once boiled, add daikon, burdock, potatoes and beef pieces. Cook on low heat for 30 min, covered.
8. After 30 min, add the boiled eggs, konnyaku, fish cakes, ganmodoki and mochi packets. Cover and cook on low heat for another 30 minutes.
Oden is best served with hot mustard (karashi), rice or onigiri.
