How to make our legendary DUKES Vesper Martini at home? By Alessandro Palazzi, Bar Manager, at DUKES Bar, DUKES LONDON
Ingredients:
- 4 dashes Angostura Bitters
- 10 ml Sacred English Amber Vermouth
- 80ml frozen No.3 Gin
- 20ml frozen Potocki
- 1 zest of organic Seville orange
Method:
- Drop 4 dashes Angostura Bitters into the frozen glass
- Top the glass up with 10 ml Sacred English Amber Vermouth
- Top the glass up with 20ml frozen Potocki
- Top the glass up with 80ml frozen No.3 Gin
- Finish off with a large twist of zest of organic Seville orange, squeeze the orange zest to extract the fragrant oils
- Finally, gently swirl the orange zest around the rim of the glass and drop it into the glass and enjoy your DUKES Vesper Martini

Dukes is so great, but I am sure, that his Martini should be served only at Dukes bar, because if we try to make everything at home, then there is no reason to go out and we don´t experience this special moment, so only at Dukes bar!!! Thank you

I tried making this according to the book's recipe. I used Bombay Sapphire. Chopin Potato Vodka. Lillet. And a lemon peel. However, I failed to zest the lemon and did not use Angostura. I did, however, ensure my glass was frozen and used a mixing container filled with ice. I stirred instead of shake because I read that shaking causes cloudiness. Well, it's nice to experiment.

I would think the sapphire would impart a strong taste and overpower the martini.
