You are one of my favorite gurus of Italian cooking and this was a great video as always. I have successfully done this dish without frying by letting the eggplant start with the garlic and cooking it with the tomatoes a bit longer. Here in New York, we have ricotta salata available but after adding that we add a couple of dollops of fresh ricotta as a final topping . It doesn't have the same effect as the crunch topping but it is still delicious.
My all time favourite. I agree that other cheeses work better than ricotta salata- I tried even grated manouri cheese for garnishing with some ricotta in the sauce, and it was nicer. Can’t wait to try it with pecorino romano!
This is the pasta dish that made me go from an avid eggplant hater to absolutely obsessed with them. If you try this dish when it's done well and/or with a very good quality eggplant then it is absolutely incredible. I'm sure you would love it

I had pasta alla norma in Palermo, I really liked it🙏 I think they made it with Ricotta. I didn’t think it’d be this easy to make! Now i need to go and pick up an eggplant and get to cooking👨🏻🍳
Pastifico Liguori is definitely by the far the best pasta. I’ve seen Pasta alla Norma before and definitely want to try it. Vincenzo I did want to ask, would the dish also work if you wanted to use an air fryer instead frying the aubergine in oil. If so what temperature would you recommend. The reason I ask as is for two reasons, the first is to use less oil for health reasons and the second, I have a disability so sometimes I can’t stand for too long. Grazie
I could cook and eat food like this every day. Simple, quick, not too expensive. When you make food like this, you feel you have created something, not just "Meat and 2 veg". The hard part for me is mantecato. 🤗
I grew up in London but my grandmother is from Siracusa, Sicily. Seeing this dish being prepared and eaten brings back memories of that wonderful woman who featured so prominently in my childhood, imparting to me a love of simple and delicious Sicilian home cooking.

I made this a few weeks ago. The only difference was that I cooked the eggplant in an Airfrier and i did not use cheese. It was abit underwhelming the first but amazing the day after. After watching this again, I see my error as in your case the eggplant spent more time in the sauce whereas i added the eggplant in at the same time as the pasta.
I'm very happy for today I found a store who had Italian foods like guanciale, pancetta and other ingredients you have used for sale. They were not the cheapest (about € 5/hg) but I must try some day. I'm getting the hang of it now - I hope. Simple and "clean" flavours are the best!
This is fantastic.. thanks. But I have a question. Why do we Cook the tomato sauce 30 mins in this recipe but 10 mins in the spaghetti pomodoro? Do we need thicker / richer sauce in norma? Thanks
Hi Vincenzo! Sunflower is one of those toxic vegetable/seed oils... try Peanut or Rice Bran for frying/high temp cooking - they are (slightly) more "healthy", or at least less toxic!👍Kind regards, Mary from Brisbane.😉🤗

Great recipe. I'm sure it tastes amazing. To make it healthier maybe baking the eggplant strips instead of frying but the taste will probably not be the same and maybe texture too?🥲
Last month I went to Sicily for a week and I had pasta alla Norma 5 times cause it was my absolute favorite food. Now, back home I’m trying to educate myself on making it on my own cause I can’t live without this pasta 😄🥹😍
Will try this for sure. my favorites are Pasta alla Norcina Pasta alla Carbonara pasta all olio con Peperonccino But pretty mutch all of the 4 Roman pastas are pretty good.
this is one of my favorite italian dishes, particularly with ricotta salata. Definitely a pain to find if youre not in italy though, in germany you can sometimes find it at italian supermarkets.

One of my very favorite, but does take some extra time because of all this frying, yet better to have lot of oil,I usually prefer Bucatini with this dish but Penne may be equally good option or even better, Thanks for sharing

Unfortunately, most American eggplants aren't very flavourful so whenever I make this recipe using those the eggplants pretty much just disappear in the sauce and they aren't the star of the show like in the pasta alla norma I had in Italy. Is there a breed of eggplant that is better than the standard American ones, or is this what I have to deal with for now?

Very similar to one of my go to pastas -- I just didn't know it by name. Yes, my Sicilian grandmother introduced to eggplant cooked this way. I don't recall her serving it with pasta to me, but the first eggplant I ever liked was fried this way and served with tomato sauce, in a sandwich.
It's tough when favorite dishes become a challenge. Perhaps you can explore other pasta recipes with ingredients that suit you better. I have a huge list of recipes you could check out.
I recall salting tomatoes is good for bringing flavor, Wouldn't it be good to salt the sauce after putting tomatoes? Or would the pasta water do the "salting" ?
