Sally I will always say yes to rum also. I love that you created the rum syrup along with adding a little bit inside the almond cream. Great tip I’m putting the sugar on top to get a nice golden brown color super delicious now I’m craving one of these

Yes, day old is best! I have a fantastic bakery close by that is on my dog walking route where I pick up my croissants from. My doggo is a Nova Scotia Duck Tolling retriever (try saying that 10 times fast!). Cheers!
Absolutely! I recommend increasing the water to replace the rum so the syrup isn't too thick. You can add a bit of almond extract to flavour is syrup too if you like.
