What is Jerk?
"Jerk refers to a traditional Jamaican method of seasoning and cooking meats, vegetables or tofu. Rooted in ingredients from Jamaica’s fertile green landscape, jerk consists of an exotic blend of scallions, onions, scotch bonnet peppers, salt, thyme, allspice, black pepper and many other spices. History of Jerk
"In the 1700’s, a group of Africans who became known as Maroons combined African meat cooking techniques with a mix of Jamaican spices. Their cooking style evolved to what we know today as jerk. The jerk name has 2 possible origins: either from the Peruvian word “charqui” for dried meat or the practice of jerking (poking) holes in meat to fill with spices prior to cooking." - source gracefoods.com

The real authentic Jamaican way you blend all the seasonings together by using onions, spring onions, pimento seeds, garlic, ginger, scotch bonnets, and the list goes on., and put on a jerk pan and covered with pimento leaves and log wood., Your way is Trinidad way, jerk chicken is dry not wet then you make a jerk sauce for it.

It's going to depend on where you are. You can find the ground version almost anywhere under the name allspice though it won't be the same

You can get it by a spice vendor in the market or look for it in the spice isle in the grocery. It will be labelled "All Spice"

It can be found in some groceries just like whole nutmeg. I bought a pack in Massy. I think it was Bees brand

Nah they're known as all spice. They're bigger than peppercorns.
