Ingredients: Serves 2
**Use your favorite ingredients. This is what we used**
4-6 medium to large shrimp
4 slices pumpkin
4 slices sweet potato
1/2 bunch maitake mushrooms
1/4 cup sliced onions
1/4 cup julienned carrots
**Tempura Batter**
1 cup flour
1 egg and ice-cold soda water to make 1 cup
**Tempura Sauce (Tentsuyu)**
1 cup dashi
1/4 cup soy sauce
1/4 cup mirin ( or white wine )
1 teaspoon sugar
grated ginger and daikon ( optional )
Directions:
Prepare vegetables and shrimp. Pat everything dry.
Heat oil to 160C. Put vegetable into batter and deep fry for 2-3 minutes.
Increase oil to 180C. Batter and fry shrimp for 2-3 minutes.
Add onions and carrots into remaining batter and mix.
Spoon a mound into the oil to make kakiage. Deep fry for 2-3 minutes on each side.
Serve with salt and tempura sauce.
<材料>
(天ぷら具材)
・お好みの魚介類、野菜など。なお、シシトウやオクラなどを具材にする場合は、破裂する恐れがありますので、切り込みを入れてください。
(衣)
・小麦粉(薄力粉) 1カップ
・冷水+卵1個  合計で1カップ
 (今回のレシピは、炭酸水を使いました。)
(天つゆ)(2人分)
・だし汁 1カップ
・醤油  1/4カップ
・みりん(または白ワイン) 1/4カップ
・砂糖  小さじ1
・薬味(大根おろしや生姜など)、
※お好きな塩でお召し上がり頂いても美味しいですよ。
<作り方>
・具材は良く水分を拭き取る
・エビは、殻を剥き、背わたを取り、尻尾の先端を切り落として水分を出汁、腹側に数カ所切り込みを入れてまっすぐに伸ばす
・衣は揚げる直前に作る。卵と冷水を溶き、小麦粉を入れてさっと混ぜる
 (混ぜすぎないこと)
・具に衣を付けて、野菜類は160度程度、魚介類は180度程度で揚げる。

@@TabiEats I just watch the video where you guys tried traditional New Orleans Food, when the pandemic ends I hope you guys can do a full tour of the United States. I would love it if you came to Chicago and tried our deep dish pizza and Chicago-style hot dogs also get some Garrett's Popcorn to take home with you. And while you're at it, go to New Orleans and try the food there it's off the chain delicious

This is REAL tempura!! I don't like the panko kind with the crumbs that so many restaurants use now. It's a shame they can't do it this traditional way!!!

How have I been my whole life and not known about this carrot and onion tempura? I made that along with the shrimp tonight for dinner. Have you ever had something that was so good that the whole table was quiet because everyone was really enjoying their food? That was this food with my friends tonight. Thanks guys. This was magnificent as always.

Try slicing onions super thin, almost like it's shredded. Try it, it takes on a different taste due to the thinness. Also, try purple onions.

That's the best. My mom made that for us growing up. I love fresh broccoli tempura and fresh green beans. Especially green beans...soooo good!!

TabiEats Yup, a slice of beef. I don't know what it consists of-the menu just says Kagoshima A5 Wagyu Sushi, it was seared. But, my, it was a slice of heaven!

As I don't like the sauce surprisingly, can I season the shrimp and vegetables or the batter with salt and pepper so I don't need to dip in sauce for flavor? Thanks chef!

I tried it, the batter has more taste and it has a fluffy yet slightly crunchy coating when fried. It's really good.

Master you make this look so easy and delicious...I tried today first time tempura frying and it ended in big kitchen desaster. The batter did not stay on the food leaving the bare food item drenched in oil and the batter shell swimming in the oil...:( I don´t have gas stove and i dont have wok :(:(

Great video!!! I would love to know what type of frying oil to use. So many suggestions. I have heard a lot of confusing versions. Simply, what are the "Don't use" oils for tempura, and the proper oil mixtures for it??? (I heard chefs use mixtures of oils)

Guys, great job on cooking!! The tempera restaurant in my neighborhood also has tempura soft boil eggs, and fish sticks of some sort. All are delicious!
