I used about 2 cups of new vinegar, so my cost was about $.25 per container or less because I reused some of the brine. What the brine included: 2 cups of Vinegar 1 Tbsp of Sugar 1 Tbsp of Salt 1 cup of Water Bring to a boil and pour over veggies. Add whatever herbs you like, even older ones are fine. Put the lids on and most of the time they'll pop, almost like you're canning but not. Once cooled down, put them in the refrigerator. They'll literally last several months in the refrigerator. Enjoy!!

They look beautiful! My mom used to make pickles when I was growing up and I remember how great they were and like you, she used vinegar. But for some reason I can no longer tolerate vinegar based foods, so my preference is lacto- fermentation. It's basically the same wonderful principal. And you're absolutely right about using older herbs. My rule of thumb is if it still has a delicious smell, use it! Pickling and fermentation are really really good for you! Both are an excellent way to use up fresh food that might end up being wasted. Enjoy the contents of your beautiful jars!

Thank you dear friend! They're so delicious, especially when I eat them right away but they stay good for quite some time. I haven't done the fermenting yet.... I say yet because I still plan on it. Too much vinegar does bother my stomach and sometimes esophagus, so I have to watch it by not eating the brine along with the veggies. Have a wonderful day too!! 💗

How long do they last? Do they go in the fridge?

Hi dear Kelly! I'm so glad you asked because I must've forgotten to say. They do go in the refrigerator after they've cooled. Once you've poured the brine over them, you put the lid on and let them cool. At some point you'll hear the pop from the lid. That pop is just an extra bonus because technically, they're only good for a month or so in your refrigerator, however, once you hear that pop, it's like you canned them and they last so much longer. I've had some last a year.
