This looks so easy to make and really tasty! I want to try it but I do not know how to cook with this.

Ponzu is very easy to use. My favourite way is with some simple green vegetables. Blanch some green vegetables (broccoli, asparagus, spinach, whatever). Put it on a dish. Put some katsuobushi on top. Pour a little bit of ponzu on it. You are done. Works well with fresh tofu too! Just put the tofu on a dish. Put katsuobusi on top. Pour a bit of ponzu on it. The other thing you can do is make a "nabe". Put vegetables, meat and tofu in some dashi. Cook it for a bit until the vegetables are soft and the meat is cooked. Then you use a slotted spoon to take the solid parts out into a dish. You pour a little ponzu on it. You eat it :-) When you are done the solid parts of the nabe, you can add some instant ramen (with the soup packet) into the left over stock and heat it up. Or you can add rice or undon or whatever you like (with some soup stock to flavour it). We eat that a lot in the winter.
