Having just found your channel, I'm now binge watching. Um you don't mention Wasabi for a bit of zing. But next time I will try chillies. I'm wandering around too, and carry my own smoker. Also you probably know this, but have a good supply of newspapers, and soak them in the sea, and wrap around the fish. Then onto the coals. Completely cover the fish, and hey presto, steamed fish. Thank you for sharing. Take care.
