HOW - TO MAKE REAL JAMAICAN STEW CHICKEN , RICE & BEANS
WITH PLANTAINS
THE REAL YARD STYLE JAMAICAN WAY

JAMAICAN STEW CHICKEN
HOW TO CLEAN CHICKEN
1 whole chicken (about 3lb)
A splash of lime juice ( TO CLEAN CHICKEN)
HOW TO SEASON CHICKEN
1 teaspoon of salt
1 teaspoon of pepper
1 onion
3 stalks of scallion
1 sweet pepper
3 cloves of garlic OR Slice Garlic is fine
3 tomatoes
3 sprigs of fresh thyme (or 3 teaspoons of dried thyme)
1 tablespoon of butter
1 tablespoon of browning
(MIX ALL TOGETHER)
&
Oil for frying
RICE & PEAS THE JAMAICAN WAY
3 cups of rice
1 can of tinned or 1 cup of fresh red peas (either kidney beans or pigeon peas)
3 Scallion (spring onions may be used as a substitute)
1 tin (or one cup) of coconut milk
1 teaspoon of salt
2 sprigs of fresh thyme (2 teaspoons of dried thyme may be used as a substitute)
FRIED JAMAICAN PLANTAINS
Any oil
1 plantain slice
Fried on both sides

I made both the chicken and the rice and peas, and it tastes delicious. Anyone reading the comments before trying, I highly suggest using the parboiled rice as suggested. I used regular rice and it came out a little on the sticky side. The flavor is so good though. Also, I added a little bit of corn starch to thicken up the sauce on the chicken. The flavors are so yummy! Thank you for this video! Update! The rice was just fine once it had a chance to sit overnight, no longer sticky at all. I'm still going to use the parboiled rice next time, but if you don't have it, don't fret.

Use less water only to just cover the rice. And cook on high until water is almost completely cooked out uncovered. Then cover and simmer on the lowest fire for 15-20 minutes. Will come out better

I made the rice as well, yet she didn’t mention seasoning 🧂 rice . But it still came out okay. Loved the recipe over all.

This is how I make mine except that I coat the plantains in a little seasoned flour before cooking so it absorbs less oil and I wrap the saucepan lid in a tea towel before covering the pan to help stop the steam from escaping. I really enjoyed watching you, thanks for posting, your accent is so cute.

Mi sista, di food look GOOOOOOOOD! BUT, about the browning part: I know you know about fashion & mi nah talk bout clothes enuh, mi ah talk bout when yuh haffi tun yuh hand & mek fashion inna di kitchen. You can always make brown stew chicken without browning sauce or burnt sugar. You can always use soya sauce, worchestire sauce (which is a steak sauce), you can also brown the chicken enough to the point where you DO NOT need browning, and just saute' the natural seasonings, add a little red wine to deglaze the pan/pot & some ketchup, and a hot water, and mek di chicken cook down inna it. Yes, you can most definitely make brown stew chicken without browning. It is possible lol I've been cooking since I could reach the stove and there are times weh mi haffi tun mi hand & mek fashion. The rice & peas: You can add a few pegs of garlic in to help the peas cook faster, and to give it flavor, and if you were to use the whole can of coconut milk, just add a little bit more water, so that it isn't too creamy. You can also crush the pimento instead of putting them in there whole. Not only does it bring out the flavor of them, but it saves you time. You won't have to pick them out while eating. You can also add a piece of smoked pigtail in there or a piece of smoked turkey in there. Country mi come from & mi do dem deh supm deh. It gives the rice & peas a really nice flavor.

This sound more like how I would do it. I put scallion whole scotch bonnet pegs a garlic thyme coconut milk and use powdered pimento hate wen I bite on it. Mi to greedy for pick den out lol.

I don’t wash mine either unless there is visible dirt allot of cultures don’t wash their rice and plenty of ya been eating “unwashed” rice and don’t even know the difference so to each it’s own

I take the chicken out, leave some oil, sautée my peppers, onion, garlic in the oil then add ketchup, scotch bonnet pepper sauce 1 cup of water and salt let it come to a boil then add the chicken back in and cover it. I add another half cup of water 15-20 min later and cover it and let it go on medium for 30-45 minutes. Juicy and falling apart when it’s done 🤤

You can also use brown rice to substitute parboiled and it comes out just as nice. I miss my Jamaican food, so im learning how to cook it myself. Can’t wait to try this tonight!!

Watched your rice and peas video using canned beans but I used Persian rice. That with this brown stewed chicken recipe came out perfect! Just added some Grace Brand Fish and Meat sauce and used the Grace Brand Cock Seasoning to replace most of the salt since I didn't have any flavor enhancer

you CAN work around using Browning. Put some oil in the pot, let it heat up, then throw sum brown sugar in and let it melt, dash in the chicken, and BAM. stew chicken without using Browning

so interesting to see other Jamaicans cook. My grandmother and mom both never use browning or ketchup. They use dark sauce/soy sauce. The reason they won't use ketchup is because it has sugar 🤷🏾‍♀️. Loved your video!

One thing though I like to see my meat darker thats just me and I cannot use rice without washing. Dont care if its parboiled. Its still not clean. My opinion.

THAT'S IS SO TRUE NO MSG IN YOUR FOOD..!! IT CAN CAUSES HIGH BLOOD PRESSURE AND CANCER AND OTHER THINGS TOO..! AND I DON'T CARE WHAT TYPE OF RICE YOUR COOKING UNLESS ITS YELLOW SEASON RICES ALL RICE COMING FROM A BOX OR BAG SHOULD BE WASHED BECAUSE THERE COULD BE ROCKS OR SMALL STONES IN IT YOU MUST WASH RICE..! AND I HAD A FRIEND WHO MADE ME SOME BROWN STEWED CHICKEN AND SHE DIDN'T USE BROWNING SAUCE SHE USE SUGAR AND IT WASN'T SWEET EITHER BECAUSE I REALLY THOUGHT IT WOULD BE CAUSE SHE TOO USED KETCHUP BUT IT WAS SOOO GOOD MY FIRST TIME EATING THIS DISH IT WAS SOMETHING DIFFERENT N VERY GOOD I THINK I WILL TRY IT FOR MYSELF. BUT SHE COULD COOK ANY WAY SHE WOULD MAKE LUNCHES FOR US I WORKED FOR NYPD AT THE P.S./H .S,.. SCHOOLS AN SHE WAS.PART OF PTA SHE WAS SO NICE MISS HER,. I LEFT NYPD DUE TO HEALTH REASON,.BUT WAS THEIR LONG ENOUGH..😀 THANKS.

I always crush my pimento and use chicken seasoning/meat seasoning in place of salt and Msg. Also some Garlic, Thyme, whole Scotch Bonnet, Onion & stock in the Rice. It tastes amazing! !!

kieth itreal... Pimento (seed) IS allspice and is usually used whole. Ground pepper corn (black pepper) is different and is not called pimento in Jamaica

You do not need browning to make stew chicken. The Trinis do it with sugar. So you're wrong on that one.
