Ingredients:
Fish of your choice (If you buy a fresh fillet, freeze it for a day to make it sushi grade & FDA compliant)
1/2 cup of Japanese rice (for one person)
Water (typically 1:1 ratio with rice. I do a touch less for sushi rice.)
1 tbsp of rice wine vinegar
Pinch of salt
2 tsp of agave syrup (or you can heat vinegar, white sugar, and salt in a sauce pan): I like it this way because I am lazy and agave is better than sugar.
Garnish:
Sea salt flakes
Lemon zest
Thinly sliced jalapeño
