Scallion Rolls, Recipe below!
These are super fun to make and extremely delicious. A perfect platter to make for all family and friends. May be a bit tough to get the shape at first, but the flavor will be there as long as you follow the recipe. The Homemade Oil is critical in ensuring a deep onion flavor. Recipe: (15 to 20 rolls)
Fragrant Oil
Vegetable Oil (2 cups)
Scallions (8 only roots and ends)
Shallot (1)
Buns
All-Purpose Flour ( 500 grams )
Sugar ( 1/2 tsp)
Yeast ( 5 grams)
Water (290 gra
Salt ( 1 Tbl+)
White Pepper (1 tsp)
Fragrant Oil ( 2 tbl)
Scallions ( 4-6 depending on size)
Instructions:
Fragrant Oil- Cut the roots and ends of scallions and finely chop one shallot. Simmer in vegetable oil until golden brown (20 minutes on low heat) then store and use when ready.
1. Prepare a cup with water, sugar and yeast and let bloom for 10 minutes. Then mix flour and a pinch of salt into a bowl and mix in the water mixture, in increments while stirring. Knead for 7-10 minutes, then coat with oil, cover and let rise for 1.5 - 2 hours.
2. Take dough out and knead for another 3 minutes. Dust the workspace and then create an initial rectangle shape with your hands. Using a rolling pin, roll up and down evenly then rotate horizontally. Roll out each side until you get an even sheet with a decent thickness.
3. Put in salt, white pepper and fragrant oil on the sheet and distribute evenly. Then put on diced scallions and spread all the ingredients equally across the dough. Slowly roll upwards into a spiral shape, carefully and being sure to tuck it in to keep it secure and tight. Should be about 5 full rotations.
4. Stretch out the dough a bit and cut into inch-width pieces. To make the shape: with a chopstick, push down the middle, flip it over and place the chopstick on the bottom using it as a center to rotate around. Rotate the piece all the way until you reach the end. Push down with the chopstick and quickly take it out.
5. Place your Buns in a steamer and let it rise again for another 20-30 minutes prior to cooking. You want to see a size increase and a bouncy dough. Then Steam for 10 minutes.
