Instructions:
Prepare the Eggs:
Crack the eggs into a mixing bowl. Add a pinch of salt and pepper to taste.
Use a fork or whisk to beat the eggs until well combined and slightly frothy. Set aside.
Prep the Green Onions:
Rinse the green onions under cold water to remove any dirt or debris. Pat them dry with a paper towel.

Finely chop the green onions, using both the green and white parts. Set aside.
Cooking:

Once the butter is melted and the pan is hot, add the chopped green onions to the skillet. Stir them around for about 1 minute to soften and release their flavor.
Pour the beaten eggs into the skillet, covering the green onions evenly. Allow the eggs to cook undisturbed for a few seconds until they start to set around the edges.
Scramble the Eggs:
Use a spatula to gently push and fold the cooked edges of the eggs towards the center of the skillet, allowing the uncooked eggs to flow to the edges.
Continue to push, fold, and scramble the eggs until they are mostly set but still slightly moist and creamy. Be careful not to overcook them, as they can become dry and rubbery.
Serve:
Once the scrambled eggs reach your desired consistency, remove the skillet from the heat.
