How To Make Simple Syrup & Rich Syrup For Cocktails. Welcome Friends! Welcome back to a series I'm calling cocktails 101 and this is all of the behind the scenes stuff that you need to make before your next cocktail party. Today we're going to make simple syrup, sugar syrup, rich syrup.
Simple Syrup
Ingredients:
250 mL (250g / 1 cup) granulated sugar
250 mL (250g / 1 cup) water
Method:
Combine in a pot over medium heat.
Stir to dissolve sugar and remove from heat when solution is clear.
Will keep in a sealed container in the fridge for 6-8 weeks.
Rich Syrup
Ingredients:
500 mL (500g / 2 cups) granulated sugar
250 mL (250g / 1 cup) water
Method:
Combine in a pot over medium heat.
Stir to dissolve sugar and remove from heat when solution is clear.
Will keep in a sealed container in the fridge for up to 6 months.
Demerara Syrup (or Turbinado Syrup)
Ingredients:
250 mL (250g / 1 cup) Demerara sugar
250 mL (250g / 1 cup) water
Method:
Combine in a pot over medium heat.
Stir to dissolve sugar and remove from heat when solution is no longer cloudy.
Will keep in a sealed container in the fridge for 6-8 weeks.

I’ve just watched both videos of cocktails syrup recipes, does the syrup with GA recipe is for special cocktails or for personal preference? You did a great job Chef Glen in both kind of syrup👌regarding the mic, no bother at all ✌️I’m looking forward to watch all your signature cocktails series 😊 Thank you🌸

There are specific cocktails that call for gomme syrup historically, but using it has fallen out of fashion, because it takes a little longer to make. I tend to really like it in cocktails that don't have any fruit juice.

I make large amounts the the heavy syrup every winter.......not for my consumption.....but to feed up my honeybees so they have enough food for winter. Summer time, a thinner sugar solution is used to feed the hummingbirds. as usual, great video.

Nice videos. I usually make my standard syrup in a 1.5/1 ratio, or sometimes just use rich in place of simple. The difference in sweetness of the finished cocktail is not nearly as apparent as you'd think, but the texture/mouth feel of a drink created with a richer syrup IS noticeably improved over a standard 1:1.

The advantage of 2:1 ratio is that the syrup will be shelf stable and not need to be refrigerated, although it will crystalize more easily which can be fixed by quickly reheating the syrup

Still think it is shelf stable? I just made a batch (2:1) with organic cane sugar and I'm not sure if I should refrigerate it or not.

Love the knowledge regarding refrigeration. I feel sometimes I am tossing things quicker then I should and its great to learn really how long something can last! Alot of what you said makes perfect sense, would love to see a video on storage. Especially after watching you carve half a pig!

I am not trying to be rude at all, I just want to inform you that the words "then" and "than" are completely different. "Than" is the word you meant to write in this sentence, not "then". Also, "alot" is misspelled. Actually it is two words; "a" and "lot" so the proper spelling is "a lot". Again, not trying to be rude, but only inform you of these errors. A lot of people make these mistakes.

I would like to make a 2:1 simple syrup for use in cold brew coffees and teas. If I would normally put in one teaspoon of granulated sugar, how much simple syrup would give me about that much sweetness?

Any difference in flavor between a brown sugar and refined sugar plus molasses? Adam Ragusea says so, but I'm curious what you think, especially for cocktails.

Really good video. Answered every single question I had. :) btw, I have even seen people make simple syrup by adding water and sugar to a bottle and shaking it very well untill it's all disolved. I personally would prefer doing it like in this video.

No it doesn't really work like that. The sugar won't fully dissolve. The heat is needed to melt the sugar enough to thoroughly dissolve.

as soon as it's made you can use it.

I boil my simple syrup (1:1) for 3 min to convert the disaccharide (sugar with 2 molecules) to monosaccharide (sugar with 1 molecule). Otherwise, the disaccharide will probably crystallize making it a bit useless for cocktails. If you find a way to make a mint simple syrup to simplify making mint juleps, I'll be very interested in that recipe. Actually, I'll be interested in your whole cocktail series.

@@GlenAndFriendsCooking Did you sterilize the bottles before hand? You didn't mention that in the video if they had been sterilized shortly before you stored the syrup. I've heard that's one thing that helps the shelf life. I've never made the stuff and wanna give it a go so I'm digging up whatever info I can.

If the 1:1 ratio is 1 part sugar and 1 part water. It would stand to reason that the 2:1 ratio (rich syrup) is... 2 parts sugar and 1 part water. At 1:28 this is explained, in the recipe on screen at the end of the video this is explained, in the written recipe in the description box, this is explained. Did you even watch?

Some would argue that the rock candy syrup that Trader Vic specified in his tiki books was 2:1 rich syrup. But I think that it was even more saturated than that.

You should just toss the syrup after a couple months no matter what, a bag of white sugar is 1$ and water in that amount is free basically.

I might suggest inverting the sugar before you make the syrup, I’ve not tried this but possibly adding creme of tartar may stop the crystallisation by inverting the sugar. Might be a good experiment

Yes use a small amount of acid - even just lemon juice, to invert some of the sugar.

I've watched both 'syrup' videos and took a while to figure out what that noise was. At first I thought it was the pots on the stove until I saw that clasps on your damn pants/overalls. It drove me nuts.
