Where is this recipe she speaks of? I didn’t see anything in the description and she never says how much salt / sugar and some other seasonings to use.
It's outdated. RJV13 has modifications such as using a 66/33 ratio of lean pork to back fat, more ginger, and Szechuan peppercorns. The yield is the same, but there is less downside risk.
