Southern Greens Recipe
Ham Hocks:
2 lbs ham hocks (I used 2.27)
1/2 cup diced yellow onion
2 32 oz containers of chicken stock
10 cups of water
Collard Greens:
1 bundle of collard greens (~15 cups)
1 1/4 cup water
1 tbs Lawry’s seasoning salt
3 tbs Apple Cider Vinegar
1/2 tsp red pepper flakes
8-9 dashes of Cholula Hot Sauce
2 1/2 tbs white sugar
1/2 tsp onion powder
1/2 tsp garlic powder
1. Wash and clean ham hocks. Add stock to pot and place over medium high heat. Add in yellow onion. Cook for 2 1/2 - 3 hours adding cups of water as stock decreases.
2. Wash and chop your collard greens.
3. Break ham hocks apart removing only the bones. Add in 1 1/4 cup water (only if liquid is low, do not add too much water because greens create liquid! Add enough to cook greens). Add in washed and chopped greens.
4. Let cook for 45 mins - 1 hr or until tender. Add in all seasonings, vinegar, hot sauce, and sugar. Taste and adjust seasonings.
5. Serve with cornbread and enjoy!
