Strawberry Hard Cider with Store Bought Juice. We once made a strawberry cider, but we didn't record it as we weren't making videos back then. However! We recently tasted this cider again, and thought... "We need to make strawberry cider!". So here we are. We're using store bought apple juice and frozen strawberries, a little sugar and some S-04 yeast to make this. It's a fairly simple cider, but one you might enjoy and it's ready to drink a lot more quickly than many other brews!

Lots of strawberry farmers in my area. Buying them straight from the farm stand makes them really cheap (comparatively) and some will even allow me to pick them myself. A few hours of picking & cleaning, a few nights in the freezer and coming spring this one’s high on my list! 🤩

Its taking a while to get to all of your videos. Still so much fun! I regularly make raspberry and blackberry cider and have made strawberry as well. This (cider) is what got me into home brewing. I have found about a pound of berries per gallon works out for me. I recently bought strawberries and froze them (I didn't have time to start) and will be making a strawberry rhubarb cider soon. I have seen you add fruit during primary fermentation and that is what I do. However, you are waiting to add the strawberries this time. Why? I added them during primary the last time I made my strawberry and it worked out. Yes, The "bloop bloop bloop" needs to be a T-shirt!

To do something a little different is all. Adding them in secondary gives more fruity flavor and less "essence" of the fruit in alcohol.

In regards to the comment about 8:40 regarding yeast colonies... I messed up a batch of about 5 gallons mead... I was a dummy and went autopilot just adding half a packet to it... came back to some lovely hues of white and green mold islands on top. What are your thoughts on using campden tablets when using frozen/fresh fruit? I have never done it and was looking at other recipes, found out a lot of people say it is a must add to prevent spoilage, now I am worried some of mine may spoil. I DO pasteurize all of my ciders to date for the purposes of bottle carbing, but have never used the campden tablets. I would prefer to keep it clean and use minimal additives.

New to brewing anything (MoreBeer starter kit is still in the box). I want to make Porters but my wife loves pear ciders and etc. I'm been loving your very easy-to-follow videos, super beginner-friendly. I notice how you guys stress aeration, degassing, breaking up yeast, and the general need to mix things up. Have you tried using a cheap magnetic stir plate? If so can you tell me to pros/cons? Followed your advice and picked up some half-gallon apple juice bottles and they gave me the juice!

I don't think it's worth it, but that's just my opinion. Not really going to degas much, or aerate much. There's no need to break up the yeast past day 2 or 3 so.... to me? Just more trouble than it's worth.

I had done a Hydromel batch with raisins back in June 12, it's going very well, I did notice a thick layer of sediment or yeast deposits on the bottom like yours did, I'm assuming that's the "yeast Cake" and that its a normal thing, or does it happen when you use slightly too much yeast/yeast nutrients? I used Fleischmann’s yeast. After 13 days it stopped fermenting. At 14th day I took a reading and after calculations I’m at 6.17%. Is that because of the yeast or something else? I did leave the jug on the counter fermenting. I just added frozen mixed berries instead of strawberries (wife request). Oh and it tasted pretty good at this point. Even after racking we have a ton of floaties, some of it has settled, but there's some fruit chunks/pieces that are very small just suspended about an inch from the top of the liquid. Any recommendations on getting this 'pulp' style substance out before bottling? I thought about using some kind of fine mesh sifter, but I think some of these chunks will make it through even the smallest mesh.

Would a proof hydrometer provide any valid reading for wine or mead. Did not have a hydrometer when I started. Concern is at what proof is non refrigeration safe? Got a cherry mead, several wines and dry mead to deal with. Everyone of them 10% or greater simply because of sugar added and 71b, that and alcohol is very present. So throw me a bone here, cause I am developing a recipe for an smoky mead along Islay scotch like Ardbeg. That an bourbon tasting mead.
@CitySteadingBrews
@CitySteadingBrews 3 года назад
It won't really since you normally need over 30% alcohol for those to even get a reading. Over 10% is generally considered safe, but I store ciders and beers that are 5% too. Never had a problem. As long as fermentation is done and you bottled properly, shouldn't be an issue.

If you're not racking or putting into secondary fermentation, then I would definitely leave it longer until you have little gas activity. You might be creating a pressurized time bomb!

lol, Paul knows what he's doing.... also, depends greatly on your gravity levels. Some things are done in 3-5 days.
@paulallerston3771
@paulallerston3771 4 года назад
Started at 1.083. Tasted yesterday and it's dry already. I'm planning to sweeten to around 1.030, bottle, leave it for 2 days and then pasteurize. I'm well aware of the bomb potential... :D

do u have to put the extra suger before fermintation or can u do non formenting suger after for taste and then primer suger for bottling ?
@CitySteadingBrews
@CitySteadingBrews Год назад
Yes, you can back sweeten with a non fermentable sugar to your desired sweetness then add the proper amount of fermentable sugar for carbonation as long as the original beverage fermented dry.

Love the vid. have a I have been working on a wine would like your in put on it if you have time? Started with 16lbs of strawberrys 18lbs of sugar.starting off with a OG of 1.122 after 21 days using a wine Yeast brand Wyeast 4028 red its a liquid yeast i got when i was just looking at things. any way after the 21 days it died and ended up at 1.030 this as well started out as a 7 gallon batch was wanting a bit more ABV but dont wanna kill the sweet taste it has so just racked it and letting settle. Would I have been better off using DADY Yeast.
@CitySteadingBrews
@CitySteadingBrews 4 года назад
If you ferment it more, it will be less sweet. I'd just drink it and enjoy it.
@CitySteadingBrews
@CitySteadingBrews 4 года назад
That yeast you used only goes to 14% anyway. You're at 12% at least. I would think it's more like 14%ish though with the strawberries since they wouldn't have been included much in the OG.

I need advice on how long to leave my strawberries in my conditioning must. This the cider that went full dry from 1.180 start reading. I have just realized (Red Star Premier Classified) is a champagne best.
@CitySteadingBrews
@CitySteadingBrews 4 года назад
Two weeks or so. Are you sure your og was 1.180 and not 1.080? Without adding a lot of sugar to the cider it won’t be so high.
@dennisestes1698
@dennisestes1698 4 года назад
CS Mead and More I think I read it as 1.180, however I am still leaning so I may have miss read and it could have been 1.080. It did not taste like a 24% so I am willing to say I miss read.

A fermenter with free juice in it. Then I know a couple of brewpubs that sell fermenters with half-price beers! Before covid, I'd walk down the juice aisle at the grocery store and not think anything about it. But during isolation I fell down the deep, dark hole of home fermenting videos, and now I look at all the gallon bottles of juice on the shelf and wonder how many of those are actually being bought to drink as juice. It all makes sense now why the juice aisle is so big, lol...

How is cider in the US differed from UK cider? I get the impression you like sweet cider but is that standard in the US?
@CitySteadingBrews
@CitySteadingBrews 4 года назад
Well... I'm not in the UK so I cannot really speak on what is available there, but I think in general, UK hard cider is drier than American versions.

"EVERYONE LOVES A GOOD BLOOP, BLOOP, BLOOP!" That's a new song title if I've ever heard one. It's been a long time since I made an Apfelwein, I've made two, a sweet one and a spiced "Chrismas Apfelwein." No one liked the second one which had cinnamon and brown sugar. Maybe you guys can make such a thing properly.

Yeast doesn’t determine abv. Use about a tsp and a half. It’s hard to use too much but if you don’t have enough the colony may not form.
