RECIPES! ~ Chicken Satay With a Spicy Peanut Sauce Ingredients * 1 1/4 pounds chicken breasts * 4 cloves garlic, grated * 1 large shallot, grated * 1/4 cup coconut milk * 1 tablespoon brown sugar * 1 teaspoon kosher salt * 1 packet (1 teaspoon) Sriracha * 1/2 teaspoon black pepper * 1/2 teaspoon ground coriander * 1/2 teaspoon ground cumin * 1/4 teaspoon turmeric powder * Salad: * 1 English cucumber * 1 red onion, small diced * 1/2 cup cilantro leaves * 2 teaspoons rice wine vinegar * 1/2 packet (1/4 teaspoon) sugar * Peanut sauce: * 2 cloves garlic, grated * 1-inch ginger, peeled and grated * 1/3 cup creamy peanut butter * 1 teaspoon fish sauce * 1 tablespoon golden brown sugar * Zest and juice of 1 lime * 1 teaspoon rice wine vinegar * 3 tablespoons hot water * 4 packets (2 tablespoons) soy sauce * 1 packet Sriracha Steps 1. Preheat oven to 425 degrees. 2. Slice chicken into 1/4-inch strips. Slightly pound until even and place in a resealable bag. Add shallots, garlic, coconut milk, brown sugar, salt, Sriracha, pepper, coriander, cumin and turmeric; mix well. Marinate in the refrigerator for 4 hours or overnight. 3. Soak skewers in water while marinating chicken to prevent them from burning.For the chicken: Remove chicken from marinade. Thread the chicken onto the skewers and place on a baking sheet. Bake until cooked through. 4. For the peanut sauce: Mix all ingredients for sauce in a medium bowl. If too thick add more water 1 tablespoon at a time. (Can be made 1 to 2 days in advance.) 5. For the salad: Cut cucumber in half. Thinly slice to create ribbons. Toss with onion and cilantro leaves. Drizzle with vinegar and sugar. Set aside. 6. Serve chicken with cucumber salad with peanut sauce on the side. Falafel Ingredients Falafel: 2 cups garbanzo beans, soaked overnight 1 medium yellow onion, grated 1 cup parsley, finely chopped 2 teaspoons kosher salt 1 teaspoon black pepper 1 teaspoon cumin 2 teaspoons baking powder 1/2 cup all-purpose flour 3 cups vegetable oil Sauce: 2 tablespoons finely chopped fresh mint 2 tablespoons finely chopped parsley Zest and juice of 1 lemon 1 cup plain nonfat Greek yogurt 1/2 teaspoon ground cumin 3 cloves garlic, grated 1/2 teaspoon kosher salt 1/4 teaspoon black pepper Salad: 3 cups romaine lettuce, chopped 1 large red onion, thinly sliced 3 Roma tomatoes, cubed 1/2 teaspoon kosher salt 1 tablespoon extra-virgin oil 4 pitas, cut into wedges, to serve Steps Place beans in a large bowl and mash until smooth. Add onion, parsley, salt, pepper, cumin, baking powder and flour. Stir until combined into a paste. Place bowl in refrigerator for 1 to 4 hours. In a medium bowl, combine all sauce ingredients. (Can be made a day ahead and stored in airtight container.) In a large bowl, add lettuce, onion, tomatoes, salt and olive oil. Toss to combine. Using a 1/8 measuring cup, scoop out garbanzo bean mixture. Form into balls and place on a sheet tray. Fill a cast-iron skillet halfway with oil. When hot cook the falafel, turning until golden brown. Remove to a towel-lined plate. To plate: Place salad on a plate. Top with falafel balls. Drizzle with yogurt sauce. Serve with pita wedges on the side. Chicken Shawarma Ingredients Yogurt sauce: 1 cup Greek yogurt 2 tablespoons tahini paste 1 teaspoon cumin 1 clove garlic, minced 1/4 teaspoon kosher salt 1/4 teaspoon black pepper Zest and juice of 1/2 lemon 2 tablespoons chopped parsley 2 to 3 drops Tabasco Marinade: 7 boneless, skinless chicken thighs 1 cup buttermilk 1 large clove garlic, minced Juice of 1/2 lemon 1 teaspoon ground coriander 1 teaspoon paprika 1 packet chili flakes 1 teaspoon salt 1/2 teaspoon black pepper To serve: 4 flatbreads 2 cups iceberg lettuce, shredded 3 vine-ripe tomatoes, coarsely chopped 1 English cucumber, grated and drained Steps In a mixing bowl, whisk together all ingredients for yogurt sauce. Cover and place in refrigerator overnight. In a resealable bag, add buttermilk, garlic, lemon juice, coriander, paprika, chili flakes, salt and pepper. Mix well. Add chicken and toss until coated. Refrigerate 8 hours or overnight. Preheat oven to 425 degrees. Generously spray a sheet tray. Remove chicken thighs from marinade and place on sheet tray. Roast in oven on top rack for 15 to 20 minutes, until top of chicken is charred. Remove and let sit for 5 minutes. Slice chicken in thin pieces. Wrap flatbreads in foil and place in oven. To assemble: Lay flatbreads on a work surface. Spoon yogurt tahini sauce on top. Divide chicken into fourths. Sprinkle with lettuce, tomato and cucumbers. Roll and serve.

here in latin america we mainly use lime,it's really hard to get your kind of lemons (yellow ones), can it be replaced by lime (green one) ? its your lemon(yellow one) sweet? and what about the lemon zest?

@@phisicoloco lime is similar, but more acidic than lemon and has a slightly stronger flavour. You could do it, but use a little bit less than you would if you had lemon.

I'm gonna be 100% honest with you. I'm not really struggling for meals but these videos inspire me to be creative with limited ingredients and to be wiser with money. I've learned that dry beans is the way to go and seasoning is key. Also that it's SO MUCH CHEAPER to make my own food then to go out to eat. I really like this series so don't stop the quality and helpful content that you've been putting out recently. Not only that but your personality is so up beat and funny. I'd be interested to see a bread episode :) keep it up!

It costs a little more, but if you're allergic to peanuts, substitute cashew butter for the peanut butter. Similar flavor, similar fattiness, and it can be made smoother than almond butter.

Once you've soaked the chickpeas, you need to let them dry a little (on an oven tray for example). Otherwise you'll end up with soggy and moist falafels. That's the twist to have very crispy ones!

That’s why mine wouldn’t fry well! I ate mine and they were and very nice brown on the outside but when I ate it, it was very “wet” and soggy and I didn’t enjoy it. I used canned chickpeas.

Not really struggling either, thank goodness,but these meals are on point. Frankie is actually a first rate chef ( I've seen him elsewhere) and let's face it...u can only make so many burgers and baked chicken dishes before you're bored. Thanks for keeping it fresh and fun!

Here in Indonesia, our satay is even simpler 😂 We only marinade the meat with a mixture of blended shallots, garlic, soy sauce and sugar and we make the peanut sauce from two ingredients only, toasted peanuts which we then ground and some brown sugar Bye-bye, all those powdered spices~

Yeah, it's obviously not being calculated by the actual cost of purchasing the ingredient, only by the amount of the ingredient that goes into the recipe.

If I'm really hard up, then yes, I do. That's the advantage of paying for gas over paying for ingredients -- you can buy $1.53 worth of gasoline if you only have $1.53. Can't do that with a jar of tahini (as delicious as it is).

Try Philippines street foods! It is a lot under $2... try the kwek-kwek and toknining, barbecued porkface and fishballs! For sweet, try sugar coated banana or sweet potato barbecue and turon. For drink, try halo halo, ice scramble and ice candies!!!

Satay here in Malaysia is really cheap. Years back it was as low as about MYR 0.80 per stick (which is USD 0.19!). Although Satay is not my utmost favorite, it really is quintessential street food.

Have you done one with "street tacos" -- the little tiny open-face tacos on those tiny tortillas, with odd beef (well, I get the Carne Asada type) and some sort of finely diced onions that somehow, *somehow* do not make my cry or have that "bite" that makes me hate fresh onions in every other dish? (Oh, and fresh cilantro, and a lime wedge.) Also, sopes. Because sopes are the bomb. I get both of these interchangeably at the Mexican place next to our Landromat, and I'm not troubled paying $2.00 for a sope or $1.50 for the tacos, but I'm sure you could make them at home much, much cheaper. Also: Hominy. That weird corn stuff, in broth, with shredded meat, over cabbage. I haven't had it in ages, and I still fondly remember my first encounter with that stuff. Also: Rice Milk, made fresh at home, with cinnamon.
