Swiss meringue buttercream can be kept at room temperature for 1-2 days when covered, but it's best to refrigerate it after that for up to 5 days or freeze it for up to 3 months. If you decide to freeze it, make sure to store it in an airtight container and thaw it at room temperature on the counter when you're ready to use it.
