How To Make Syrian Kabab Halabi
1kg beef mince (or lamb mince)
1 tsp salt
1/4 tsp nutmeg
1/4 tsp ground cloves
1/4 tsp ground cinnamon
1/4 tsp ground cardamom
1/2 tsp black pepper
1/2 tsp ground cumin
1/2 tsp ground coriander
1/4 cup pine nuts (optional)
1 brown onion, thinly sliced
1 red capsicum, thinly sliced
2 tbsp olive oil
4 crushed garlic cloves
2 cans crushed tomatoes (2*400g can)
season with salt and pepper

In Lebanon we called it Kebab Hindi. It is exactly the same your recipe.

here in the uk, we make a bastardized version of this. we buy a doner kebab, with no salad just meat. get home make this sauce, cut the pitta bread into square line the bottom of a dish, put the doner meat on top and then poor the sauce over it and bake. the bread on the bottom goes all soggy and soft. its ultimate comfort food. but il bet youre horrified weve ruined your dish over here, haha but honestly its really nice.

Awesome recipe! It looks to me that it inclines to a "Kafta dish" more than being "Kebab", especially when you added a red sauce and cooking inside the stove! But it still amazing way for grilling kebab on the pan instead of traditional bbq on a charcoal!!

Seen a very similar recipe for this using almonds instead of pine nuts The sauce used finely diced onions and no capsicum with the edition of sumac. The meat was baked for 10 minutes rather than fried. They also baked it without foil with the addition of bell pepper rings on top. I think I prefer your version.

It is recommended to keep the number of used spices to a minimum of 4 in the prepared food (including salt, and garlic). In this recipe there are more than 2 spice which have same function in food preparation. Even in Iranian kitchen good cocks keep the number of used spices to a minimum. 1- To get read of the gamy smell you use one spice like black pepper, comment, and coriander. 2- To give fragrance better than meets smell you add one spice like cinnamon, cloves, and cardamom. 3- To add color other than the earthy color you add one spice. Turmeric, and paprika, and the queen of spices Saffron. 4- To make the food more tasty you add salt. 5- Some spices are used as preservatives (in warm areas). Like Hot chili, ginger, and cinnamon. 6- Adding many spices will make people eat more than they need because the test and smell cheats them and they will feel that they did not have enough food, and will lead to overweight people. It will also make the people eating the meal not able to judge the kook because they only test the spices. 6- some spices have more than one function like ginger, red chili, cinnamon, saffron. I love spices and including all the spices you used, and I love Kebab too. Thanks for the video. By the way this food you made is called Hindi Kebab in Syria.
