TAHINI
Ingredients:
150 gr (5,3 oz, 1 cup) raw sesame seeds
3 tablespoons hazelnut oil
Directions:
• Warm 150 gr raw sesame seeds in a large steel pan. Just warming every sesame seed will be enough for making tahini. Don’t roast them until all of it turns to brown. Using a steel pan is important as it has no coating, not releasing harmful gases at high temperatures. You can use a cast iron pan as well for browning.
• Add the sesame seeds in food processor while they are still hot.
• Pulse for about a minute and add 3 tablespoons of hazelnut oil. You can use grape seed oil or sunflower oil as well but prefer a seed oil then olive oil for this recipe.
• After working food processor for another 3 minutes your tahini will be ready to enjoy. First the texture is going to be sand-like. Don’t give up on that stage and continue. After enough patience your tahini is going to be creamy and dreamy.
TAHINI & MOLASSES
Ingredients:
1 tablespoon tahini
1 tablespoon molasses
Directions:
• Mix 1 tablespoon of tahini and grape molasses in a bowl.
TAHINI & COCOA SPREAD
Ingredients:
1 tablespoon tahini
2 tablespoons honey
1 heaping teaspoon cacao
Directions:
• Mix 1 tablespoon tahini, 2 tablespoons honey and 1 heaping teaspoon cacao. Your healthy cacao is ready. You can adjust the amounts to your taste.
HİBEŞ
Ingredients:
1 cup of tahini
2 lemons’ juice
½ cup of water
2 cloves of garlic
1 teaspoon ground cumin
1 teaspoon paprika
Directions:
• Squeeze 2 lemons and mix it with 1 cup of tahini. Add 1 teaspoon cumin and 1 teaspoon paprika.
• Puree 2 cloves of garlic and add to mixture. Hibeş is a great sauce for kebap or you can eat as a dip or mezze.
• For toppins you can sprinkle some paprika, cumin and fresh parsley leaves.
TAHINI SALAD DRESSING
Ingredients:
2 tablespoons tahini
1 lemon juice
5 tablespoons olive oil
2 tablespoons yogurt
Salt
Pepper
Directions:
• Mix 2 tablespoons tahini, 1 lemon juice, 5 tablespoons olive oil, 2 tablespoons yogurt in a jar or glass.
• Add salt and pepper to your taste, your tahini dressing is ready to enjoy.
GREEN TAHINI
Ingredients:
1 batch of coriander
100 ml water( 3,4 fl oz, 2/5 cup)
2 cloves of garlic
70 gr tahini (4-5 tablespoons)
½- 1 teaspoon salt
½ lemon juice
Directions:
• Add 1 batch of coriander, 100 ml of water and 2 cloves of garlic into food processor.
• Pulse until it becomes a puree, add 70 gr tahini, add salt to your taste and squeeze half lemon juice.
• Pulse again until mixture is blended well. Your green tahini will be great with köfte, or as a dip for chips. The other upside of this recipe is tahini is a great substitute for cheese if you are not eating diary or if you are a vegan.

OMG I don't know how you appeared on my youtube screen but I'm just loving the recipes. After spending over two years hooked on Turkish dizis I have tried making simits, kunefe, baklava and many more. My only wish now is to explore Turkey especially Istanbul , Cappadocia, Antalya and try the amazing kahvalti .Teşekkür ederim.

I feel the same way. How could these celebrities chefs cook on Teflon? Well, many of them sell their own line of pots and pans which are all made of Teflon which truly show what they care about. The Teflon company polluted all the waters on our planet. I myself during the covid shutdown found out about the dangers of Teflon by watching the Documentary "The Devil We Know" and the movie "Dark Waters", both on Netflix. All these years that they were being sued they were still selling their products all over the world. I now use cast iron and stainless steel and glass. I prefer cast iron because it is non-toxic and after you learn how to use it you will love it.

A lot of valuable information here. I love making my own tahini because I can customize it to my taste. It is also fresher and less expensive than the commercial which is not even popular where I live. The degree of roasting, the amount of salt (not mentioned in this video), and so forth. I have learned to use sesame oil as the oil component when making it. I have both toasted and untoasted sesame oil and prefer using the toasted variety as I love the pronounced sesame flavor. The best things about making your own - anything - is that you can make it exactly to your taste and nutritional requirements. After making the tahini, my food processer is pretty messy and it's hard to get the last bits out. What I like to do then is add some (cut up) dried fruit and give it a spin. It cleans up the processer to some degree and the result is a delightful simple candy (in my opinion).

amazing video, thank you ! In Iran we eat Tahini with Grapes Syrup instead of Molasses. My mom is originally from a small City there called Mahallat and i remember some streets were smelling like tahini all the way because of small shops which used to make it themselves, love this point about food that makes people come closer and see their similarities instead of differences.

We use unroasted sesame oil for cooking in some parts of India for our everyday cooking, so I tried tahini with it. It intensifies the taste of the sesame seed in the tahini. Just loved it. Also love your channel. You come across as a woman in love with food (like me!) and you communicate that with so much understanding and respect for your cuisine. Enjoy that.

Thank you so much for the lovely ideas. I hadn’t seen some of them before. My granddad used to grow sesame in Southwest Bulgaria. At the end of the season he would take it to the mill and they would grains it into trajíun (tahini). He would then mix batches of it with honey he would buy from the bee keepers , add a little water to it and we would eat it like that for breakfast or any time of the day we wanted something nice. It would be put on bread.

Ah! I was making Hibeş and didn't even know its name! So delicious on everything. Also, I mix tahini, lemon, Greek tzadziki and use this on kebab, as a dressing, or as a dip.

That green tahini looks delicious. There is a Indian chutney I made on a regular basis now, a bunch cilantro/coriander, garlic (4 cloves), 1-2 Serrano chili's or Japaleno depending on your taste or mood, a nub of grated ginger, pinch of salt, juice of lime and puree it. Often I end up with left over and just end freezing it till the next meal calls for it. I think now I am going to adding some tahini to and turn it into a salad dress or mix it in plain rice ooooh so many meal ideas. BTW I made your Pide recipe and my husband loves it! The bread came out absolutely delicious. I plan on making it again later this week.

Loooving it!!:) Working on a good LowCarb Cookie Recipe, lately.. and it involves Tahini!! 3 tbsp Keto Steviol sugar, 1.5 tbsp Cocoa pwd, 1\2 tbsp Coconut flakes, 2 tbsp Cocoa nibs, Tbsp Poppyseed, dashes of salt & bk powder, [I admit I threw in a tbsp of bitter Chocolate chips, teehee], 2\3 c Almond flour ; mix the dry, then add 1 egg yolk, 3 level or 2 heaping tbsp TAHiNi, tbsp of water so it mixes nicely .. these turned out to be my nicest cookies so far [tho needed Cinnamon imo]. Baked 19 min at 150 Celsius.

I love tahina, in my homeland Thrace (Greek part), sesame was very important in the older times, they didn't had olive oil, they were using sesame oil in cooking and for everything, also it's a superfood.

Hello, thank you for your good tutorials. I suggest that you try tahini with dates. In the south of Iran, we use it with dates or date syrup, especially in winter.

Thank you Refika for the tip. Although I've made my own Hummus and Baba Gannoush, I haven't bothered making my own Tahini yet. One side comment I would make: I have a silicone spoon that I use to get every last drop of anything that I prepare in a liquidiser. It reduces waste, and makes washing up easier. We visited Anatalia and Cappadocia and loved it. Hope to visit again soon. I can't wait to watch your other video. Wassim

When you say "molasses", I guess you mean "pekmez", and I guess you mean the grape version. Could you do a video on Turkish molasses to help us understand this ingredient? In the US, "molasses" means "a by-product of sugar refining"; anything else needs a modifying word, like "sorghum molasses" or "date molasses" or "pomegranate molasses". I'm from rural Virginia, and we used to raise sorghum and boil it down for molasses in the fall. I won't be doing that at home any time soon, and I won't be be making pekmez, either. But I'd like to know more about it.

She said she used carob molasses but most popular and widely used ones are made of grapes in Central Anatolia. In my home town in Black sea region white mulberry molasses is very popular. It is basically fruit juice reduced by boiling for hours. We do not add anything to mulberry molasses but grape juice is very acidic so they add sometype of local clay as preservative.

Carob molasses, keçiboynuzu pekmez or dibs bi kharrob. The mixture with tahini is called dibs bi tahini. Carob tastes more or less like chocolate.

I’m in the U.S. Where I live there are some international markets that sell tahini, usually in 2 pound (about 900 grams) jars. It’s actually easier and less expensive to find tahini than large quantities of sesame seeds. I like to use it in salad dressings and spreads for sandwiches. I will have to try your green tahini recipe!

Thank you! You can try tahini with molasses made of sugar cane instead of carob 😊 you can find it in groceries that sell Egyptian foods in Istanbul. It is less bitter. Also try not to mix it with molasses and you will get much better taste 🙏

I had to make this as a separate comment. Glad you interjected the original video to introduce the Corriander/Tahini dip or salad dressing. In India, we make a similar side dish or Chutney but it also includes a ginger and chili paste, which goes quite well with Samosas and other appetizers as well Naan, Roti, Parathas and Rice pilaf or Biriyanis.

Dear Rafiqa, thank you for sharing so many variations of tahini. I am surely going to try them one by one as my children & grand children love Lebanese food. Normally we but readymade tahini but your video is so inspiring that I am going to make it myself. Will check your other recipes as well. Lots of love from India.

We used to make a mixture of peanut butter and maple syrup and spread it on our bread or add it to celery sticks to eat. That sounds like what you did with the tahini and molasses. Sounds yummy!

There are a couple of things I want to say about this video and your other ones. First things first, you mean to tell me that Tahini is THIS easy to make?!? I bought Tahini from the store, but I have un-toasted sesame seeds in the pantry! I feel dumb. The second thing is the love I feel emanating from the screen is intense! I tear up every time. Thank you ever so much for English language version. I have been binge watching all night and now in the morning hours. I am going to make your version of yogurt. I was wondering on some of your cheese videos you use fresh lemons, which I don't have can I use store bought lemon juice that comes in a bottle? I use for cooking and store it in the refrigerator. For making different types of cheese do you prefer lemon juice or vinegar? Which one would give it a sweeter flavoral flavoring please?
