Tex-Mex Enchiladas
with homemade sauce
Ingredients for the meat filling
2 lbs ground beef
1 white onion diced
1 Pablono pepper diced
1 Anaheim pepper diced
2 tbsp minced garlic
1 tsp onion powder
2 tsp sazon tropical seasoning
2 tsp cumin
1/2 cup water
1 tbsp chili powder
1 tsp tomato bouillon
1 tsp black pepper
2 tbsp tomato paste
to pan medium high heat
brown the beef with the onion and the peppers, and add all the seasonings listed above. Cook till the beef is no no longer pink. 10 minutes.
Ingredients for Enchilada Sauce
4 tbsp flour
4 tbsp chili powder
1 tsp onion powder
1 tsp garlic powder
1 tsp smoked paprika
1 tsp cumin
1 tsp black pepper
1 can bone broth
heat up the oil
add the flour and whisk
now add the chili powder and whisk
add all the seasonings listed for the sauce and whisk
now, slowly whisk in the can of bone broth
whisk till no longer grainy and the sauce just coats a spoon. remove from heat and set it to the side
For the Tortillas
white or yellow corn tortillas
oil
heat up some oil and add a tortilla cooking for 30 to 40 seconds on each side so they don't fall apart when you roll them
Preheat your oven to 350 degrees
add a ladle of sauce to the bottom of a baking dish
dip your corn tortillas into the sauce lightly
add beef filling to tortillas and roll
place the rolled tortillas into the baking dish
spoin some meat mixture over the tortillas
add cheese (your choice)
add another ladle of sauce over the cheese
add more cheese!
bake @ 350 degrees for 15 to 20 minutes just long enough to melt the cheese
garnish with onions, Avacodos, and sour cream.
