Making curry paste from scratch is well worth the effort and time. You can always adjust the level of spiciness to suit you, and they taste better too. I prefer to make the curry paste in a mortar and pestle as this slowly releases the flavours and aroma. However, If you decide to use a food processor, then make sure to grind the roasted spices separately until you have a fine powder before adding to the rest of the ingredients.

@Gadis Monster: The paste shld be okay in the fridge for about 2 weeks. You can divide into smaller portion and freeze them too.

I always love making curry's or masaman from the scratch, the reason is adding some of the best natural medicinal herbs like turmeric or galangal or making it over powering or less or just reduce it to almost nothing

Made this paste last year ( 2018 ), it goes a Heck of a long way, AND kept in an airtight jar in the fridge, it Doesn't go off ! Superb recipe ! ! !

That is a beautiful mortar and pestle, may I ask where you got it from? All the ones I've found are pretty small!

We don't have most of the ingredients where I live. No lemongrass stalks. No galangal (I see it is a type of ginger but have never seen it before) and also no fresh turmeric. I guess that is why we buy it already made... from an Asian store. Of course there are no Asian stores within 100 miles. darn.

i subbed because of this recepy, its very good. i remove the seeds from most chilies (hands burn after that .-) and add some palmsugar, basil, ginger. would be nice to see also red and maybe yellow paste on this channel. or some veggie stuff.

Can never find whole Kadir limes.. only the lime leaf. Can you substitute the kaffir lime zest for something else?

rainbow mama I like to use mortar and pestle because the fresh ingredients would not oxidize quickly as supposed to machine. The consistency of the paste from mortar and pestle is uniform too.

+Kelvin Lam The taste should be the same except the texture of the paste. If you hv never pound any paste manually, then you prob won't know the diff anyway. ;-)

Hi - great video. Every time I make a Thai curry paste from scratch there's a point in the pounding process where I wonder if it's worth it, but then after the first blissful bite of curry I realize why I do it. Here's a question for you. When I make a green curry paste, I just use lime peel and then infuse the lime leaves into the curry as it cooks. I notice you incorporate the leaves into the curry paste. Do you still use additional lime leaves when cooking the curry? Also, I'm curious about your use of turmeric in a green curry paste. I'm not familiar with that. Is that a personal choice, or why do you do that? I'm now curious to try it myself.

It's worth the effort! As for the lime leaf, I still use a couple (torn)...Yes, some Thai chef do add a little bit turmeric in the green curry paste, taste really good too. Btw, thanks for your comments :-)

PixieTrailSprite Thanks. The one in the video is 7" has 2+ cup capacity, weighs 12 lbs. 5" inner bowl, 4.5" height, with a 7" pestle.

+MrStumpmeister This recipe yield 1 1/4 cups..I usually use 3 to 4 Tbsp for the chicken curry. So, 5 to 6 portions.

The black colour board is the cutting board. No curry leaf in any curry paste. You use them when cooking. However, Thai curry does not have any curry leaf. Thanks.

I usually use them within 2 to 3 weeks or you can portion it and store in the freezer., should last for 3 to 4 months.

candicedheemate Kaffir lime is one of the key ingredients. Try substitute with regular lime.

Thai cuisine tends to use galangal instead of ginger. If you have galangal, ginger is not necessary. If you can't find galangal, ginger is a decent substitute.
