Ro, sometimes when I dip berries or apples in chocolate the chocolate won’t set unless I put them in the refrigerator and my home doesn’t be hot either. Why does this happens?

I actually don’t do that, what I normally do is let my Candy Melts sit for five minutes before dipping and if you dip too soon you can get elephant skin or if you overheat your chocolate.
